How to choose delicious fresh strawberries

How to make Strawberry Cheesecake

Make the cake base
Put the cookies into a zip bag (food storage bag). Use a rolling pin or pestle to crush the cookies into crumbs.
Next, add 30g of unsalted butter to a pot or microwave to melt, then pour it into the cookie bag, adding 10g of powdered sugar if the cookies are bland.
Prepare a cake pan lined with parchment paper at the bottom. Pour the crushed cookies mixed with butter and sugar into the pan, spreading it evenly using a spoon or the bottom of a cup to compact it. Place the pan in the refrigerator until use.

Make the cream cheese mixture
Let 250g of cream cheese sit at room temperature for about 1 hour before making. Place the cream cheese in a large bowl and use a hand mixer to soften it, then add 80g of powdered sugar and mix on the lowest speed for 1 minute.
Next, add 115g of strawberry yogurt, 100ml of liquid cream, and 15g of cornstarch. Turn on the mixer at low speed for 1 minute.
Finally, add 1 egg, 1/2 tablespoon of vanilla extract, and 1 tablespoon of lemon juice. Turn on the mixer until the mixture is smooth and well combined.

Pour into mold and bake the cake
Preheat the oven to 170 degrees Celsius for about 15 minutes with both top and bottom heating to stabilize the temperature.
Take the cake mold out of the refrigerator and pour the strawberry cream cheese mixture in, spreading it evenly.
Place the cake mold in the oven, reduce the temperature to 160 degrees Celsius, and bake for about 40 minutes. Once baked, slightly open the oven door and leave the cake in the oven for 1 hour.

Make strawberry sauce
200g of fresh strawberries, washed, with the stems removed and chopped.
Marinate the strawberries with 80g of white sugar for 1 hour, then place it on the stove, simmering on low heat until the mixture becomes thick and dark red. Transfer the jam to a bowl to cool.
Remove the cake from the oven, spread the strawberry jam evenly over the top of the cake. Place the cake in the refrigerator for 4 – 6 hours or overnight before serving.
