Prepare the pork
To remove the unpleasant smell of the pork, rub salt evenly around it about 2 times and then rinse with clean water to drain.
Next, use a knife to cut the meat into thin slices about 1/3 the length of your finger.

Peel the ginger, wash it clean and pound it finely.

Skewering and Grilling Meat
After marinating the meat, use skewers to thread through each piece of marinated meat.
Next, you light a fire in the charcoal stove and wait for the coals to become glowing red. Place the skewered meat onto the grill and grill for about 5 minutes until the meat is firm.
Cover the grilling meat with banana leaves to help it cook faster for about 10 minutes, then remove the leaves and flip the skewers.
Cover with banana leaves again and grill for another 5 minutes until the meat is evenly golden on both sides, then take each skewer out and enjoy!

Peel the ginger, wash it clean, and then pound it into a paste or chop it finely. Similarly, cut off the roots of the lemongrass and peel off 2 – 3 layers of the outer skin, then wash and chop it finely.

Marinate the pork belly with a mixture of spices including: minced galangal, minced lemongrass, 2 tablespoons of fermented rice (filtered), 1 tablespoon of shrimp paste, 2 tablespoons of fish sauce, 1 tablespoon of pepper, 1 tablespoon of turmeric powder, 1 tablespoon of sugar, and 2 tablespoons of cooking oil.
Use chopsticks to mix well for about 5 minutes, then marinate the meat for about 1 hour to allow the meat to absorb the spices evenly.
