How to choose fresh duck meat

For live ducks

  • First, you need to choose ducks with shiny, smooth feathers, and the inner skin should have no down feathers; the outer feathers should be long and fully grown.
  • Additionally, you should choose mature ducks, as these will be more nutritious and especially have fewer down and fuzz feathers. This will save you time when cleaning the duck feathers.
  • When you hold the duck’s breast, it should feel plump and firm, with thick skin on the neck and belly indicating a good duck. Do not choose ducks with frizzy feathers, foul smell, or those that appear lethargic, as these may be sick ducks.

For processed ducks

  • Choose ducks that have a uniform light yellow color and feel fresh. Do not select ducks that are too dark or have bruises or mottled skin.
  • Press on the duck; if it feels firm and has some bounce, it’s a good duck. Do not choose those that are soft, have a foul smell, or are watery, as these indicate that the duck has been stored too long and is not fresh.

How to prepare Grilled Duck with Ginger and Fermented Rice

  • Prepare the duck

    First, clean the feathers and internal organs of the duck you bought. Then, use a tablespoon of salt to rub on the duck meat to eliminate the fishy smell and make it cleaner.

    Wash the duck meat clean and let it drain. Next, cut the duck into bite-sized pieces, about 2 finger lengths. Don’t cut it too small, as it will easily burn when grilling.

    • Method 1: Use salt, white alcohol, and crushed ginger to rub evenly over the duck for a few minutes, then rinse thoroughly with water.
    • Method 2: Rub salt evenly over the duck, then use a halved lemon to rub over the duck again and rinse clean with water.

  • Marinate the duck meat

    Wash 50g of ginger and scrape off the skin. Then crush or blend the ginger.

    Next, place the duck in a bowl, add 1/2 teaspoon of seasoning powder, 1/2 teaspoon of pepper, 1/2 teaspoon of MSG, 1/2 teaspoon of fish sauce, 1/2 tablespoon of fermented rice along with the crushed ginger.

    Wear gloves and mix thoroughly so that the spices penetrate the meat. Marinate the duck meat for 1 hour.

  • Grilling the Duck

    Brush a layer of cooking oil onto the electric grill pan, when the oil is hot, place each piece of duck meat onto the pan. Set the heat to medium and grill until the fat in the duck renders and the skin turns golden brown, then flip the meat.

    Continue grilling the other side of the meat until it is evenly golden, and the meat is cooked and fragrant. Remember that during grilling, you need to check and flip the meat regularly to avoid burning the duck.

    Tip:
    • If you do not have an electric grill, you can use a pan and grill on a gas stove over medium heat.
    • If you have a oven, you can place the duck meat on a grilling rack, then put the duck in the middle rack and grill at 160 – 170 degrees Celsius for 30 minutes in the dual heat mode.
    • If you want it to be more flavorful, you can grill the duck over charcoal, when grilling with charcoal, use a brush to apply a little cooking oil on the surface of the duck to prevent it from burning. Flip it regularly while grilling to avoid burning the duck.
