How to prepare Grilled Pork with Ginger and Fermented Rice

  • Prepare the pork

    To remove the unpleasant smell of the pork, rub salt evenly around it about 2 times and then rinse with clean water to drain.

    Next, use a knife to cut the meat into thin slices about 1/3 the length of your finger.

  • Prepare the ginger and marinate the pork

    Peel the ginger, wash it clean and pound it finely.

    Next, put all the sliced pork, the pounded ginger, 2 tablespoons of fermented rice, 1/2 tablespoon of monosodium glutamate, and 3 tablespoons of shrimp paste into a bowl.

    Mix well and marinate for about 1 hour for the pork to absorb the spices evenly.

    Tip: To prevent the meat from drying out while grilling, you can add 1 tablespoon of cooking oil.

  • Skewering and Grilling Meat

    After marinating the meat, use skewers to thread through each piece of marinated meat.

    Next, you light a fire in the charcoal stove and wait for the coals to become glowing red. Place the skewered meat onto the grill and grill for about 5 minutes until the meat is firm.

    Cover the grilling meat with banana leaves to help it cook faster for about 10 minutes, then remove the leaves and flip the skewers.

    Cover with banana leaves again and grill for another 5 minutes until the meat is evenly golden on both sides, then take each skewer out and enjoy!

    Grilled pork with fermented rice after completion will have a golden color, appealing and fragrant with the smell of fermented rice and galangal. When eaten, you will feel the pork is grilled to be tender and flavorful, not too dry but soft and easy to eat.

    To make the grilled pork more enticing, you can enjoy it with cucumber, chili sauce, green chili salt, and dipping sauce for grilled meat. Enjoying it together is truly amazing!

How to prepare Grilled Pork with Ginger and Fermented Rice using an Air Fryer

  • Prepare the meat

    Soak the pork belly in diluted salt water for about 5 – 10 minutes, then rinse it clean and let it drain.

    Next, cut the pork belly into bite-sized square pieces. Each piece should be about 1.5 – 2cm thick; avoid slicing too thinly as it will dry out when grilled.

    Peel the ginger, wash it clean, and then pound it into a paste or chop it finely. Similarly, cut off the roots of the lemongrass and peel off 2 – 3 layers of the outer skin, then wash and chop it finely.

  • Marinate the meat

    Marinate the pork belly with a mixture of spices including: minced galangal, minced lemongrass, 2 tablespoons of fermented rice (filtered), 1 tablespoon of shrimp paste, 2 tablespoons of fish sauce, 1 tablespoon of pepper, 1 tablespoon of turmeric powder, 1 tablespoon of sugar, and 2 tablespoons of cooking oil.

    Use chopsticks to mix well for about 5 minutes, then marinate the meat for about 1 hour to allow the meat to absorb the spices evenly.

  • Grill the meat

    Line the air fryer basket with foil, then place the marinated meat into the fryer. First, grill the meat at 180 degrees Celsius for 12 minutes, then open the fryer and flip the meat.

    Next, grill the meat at 180 degrees Celsius for another 23 minutes to ensure the meat is cooked evenly and has a nicely browned color.
