Prepare the ingredients
Clean the chicken leg mushrooms, drain them, and cut them into pieces about the length of 3 finger joints.
Wash the wood ear mushrooms and soak them in cold water for about 45 – 60 minutes until they expand and soften, then take them out. After that, roll the wood ear mushrooms up and cut them into strips.
Next, boil 1 pot of water at medium heat and add 1/2 teaspoon of salt to the pot. When the water boils, add the cut chicken leg mushrooms and blanch for 2 – 3 minutes, then remove and let them drain.
Wash the lime leaves and ginger, then let them drain. Cut the lime leaves into thin strips and peel the ginger, then chop it finely.
