How to cook Stir-fried Pig Intestines with Pickled Mustard Greens

Prepare the pig intestines
To remove the unpleasant smell from the pig intestines, cut a piece of fresh ginger and insert it into the intestines, using your hand to slide the ginger from one end to the other.
Then, rub the intestines with 1 spoon of salt and 1 tablespoon of vinegar, then rinse clean and let drain.
Put a pot on the stove over high heat, add 1 liter of water and 1 teaspoon of salt, bring to a boil, and blanch the intestines for 10 – 15 seconds, then place the intestines in a bowl of cold water to soak for about 5 minutes.
Next, remove the intestines to drain and cut them into bite-sized pieces about 2 finger lengths long.
Tip: To keep the intestines white and crispy, soak them in cold water after blanching! -
Prepare other ingredients
Rinse the pickled mustard greens 2 – 3 times with water until clean, then drain.
Remove the stems from the chilies and wash them. Peel the shallots. Scrape the ginger, wash it clean, and drain.
Crush the chilies, shallots, and ginger in a mortar.

Stir-fried intestines with pickled mustard greens
Place a pan on the stove over medium heat, add 1 tablespoon of cooking oil to the pan, wait for the oil to heat up, then sauté the mixture of chili, onion, and ginger until fragrant.
