How to choose fresh ingredients
How to choose fresh, quality salmon
- Fresh salmon pieces usually have a bright pink or orange color, with skin and flesh tightly adhered together. When pressed, the body of the fish should not dent or deform.
- When buying salmon, you should observe the surface of the cut; if the fish is dry, not moist, or has no black spots, and the color is even and bright, then those are fresh, quality pieces of fish.
- Additionally, fresh salmon will have a distinctive aroma without any strange or unpleasant smell.
- Avoid buying salmon with darkened flesh, poor elasticity, and leaking fluid. These pieces of salmon are spoiled and will not taste good.
How to choose fresh and delicious pumpkin
- Prioritize buying pumpkins with bright green or orange-yellow skin, which feel firm when pressed and are heavy when lifted.
- If buying pieces of pumpkin that have been cut into sections for sale, you should choose pieces that have bright yellow or orange flesh, with dense pulp; tapping them will produce a resonant sound. These will be the delicious and quality pumpkins.
- Avoid buying pumpkins with damaged, bruised, or rotten skin, as these are spoiled and of poor quality, making them less tasty and difficult to preserve.

Prepare and steam the ingredients
Before cooking the oats, place them in a bowl and soak in water for about 10 minutes until they swell evenly; this helps shorten the cooking time and makes them softer to eat.
After purchasing the salmon fillet, leave it whole, just clean it and remove the fishy smell by soaking the salmon fillet in a bowl containing about 1 cup (rice bowl) of unsweetened milk. Then rinse it with water and let it drain.
For the pumpkin, use a knife to peel off the outer skin, then cut it into pieces about the length of a finger and wash them clean, letting them drain.
Peel and slice the shallots thinly.
Next, place a pot on the stove, add about 300ml of water, then place a steaming rack inside and put the prepared salmon and pumpkin on top.
Finally, cover the pot and steam over medium heat for about 10 – 15 minutes until the pumpkin and salmon are cooked, then separate the salmon and pumpkin into two different bowls. Use a fork to mash the salmon and pumpkin.
How to clean salmon without fishy smell- Method 1: Place the salmon with 2 tablespoons of lemon juice and 1 teaspoon of salt in a bowl. Use your hands to mix well so that the salmon is coated evenly with the ingredients, then let it sit for 30 seconds to 1 minute before rinsing the salmon with clean water.
- Method 2: After washing the salmon fillet, soak it in unsweetened milk for about 10 minutes, then rinse it again with water and let it drain.
- Method 3: Soak the salmon with a small piece of minced ginger and white wine for about 7 – 10 minutes, then take it out, and rinse with water before cooking.
