Prepare the ingredients
Chicken thigh mushrooms and snow mushrooms should be cut at the base, washed clean, and soaked in salt for about 5 – 7 minutes. Then take them out and use paper towels to absorb any excess water. Slice the chicken thigh mushrooms lengthwise into pieces equal in size to the snow mushrooms.
Chop the roots off the green onions, wash them thoroughly, and finely chop the green onion tops.
Chop the red chili.
Wash the fresh herbs, soak them in salt, then wash them again and drain in a basket.
