How to choose fresh and delicious chicken
- To make delicious grilled chicken with lime leaves, you should choose a chicken that is medium-sized and weighs about 1 to 1.2 kg. If the chicken is too small, it may not be fully grown, which will not taste good. On the other hand, if the chicken is too large, it could be old or water-injected.
- Choose a chicken with a shiny yellow skin, thin skin, smooth to the touch, and good elasticity.

Prepare the Chicken
You can buy a whole chicken already prepared for grilling, but you need to pluck the feathers very cleanly and eliminate any fishy smell.
You can remove the chicken’s odor by using a piece of crushed ginger mixed with salt and white wine, rubbing it thoroughly over the chicken for about 5 – 10 minutes, both inside and outside. Be careful not to miss any spots, including the wings, neck,… and rinse it thoroughly with water.
Tip to Remove Chicken Odor:- Remove any remaining fat and blood clots inside.
- Don’t forget to cut off the oil gland that causes the odor in the dish.
- After rubbing the chicken well, rinse it thoroughly with water.
- If you don’t like using ginger, you can mix vinegar with salt in a sufficient amount. Then, rub it thoroughly both inside and outside the chicken multiple times, so it won’t smell anymore.

Making chicken marinade
Green onions only take the green part, chopped finely. 1 piece of ginger and lemongrass cut into small rounds. Lime leaves cut into strips. Red onions and chili peppers chopped finely.
Pound or blend all the above ingredients with 1 teaspoon of coarse salt, 1 teaspoon of seasoning powder, 1 teaspoon of sugar, a little ground pepper, and 1/2 teaspoon of chili powder until smooth.

Marinating chicken
Cut the chicken in half. Only marinate spices inside the chicken. Rub the spices evenly inside. Do not marinate spices on the outside, as this will cause the dish to burn when grilling.
Next, turn the chicken upside down and use 1 teaspoon of coarse salt to season the outside of the chicken.
After marinating the spices well, use a toothpick or sharp stick to poke many holes in the chicken body so the spices can penetrate inside.
Tip: Marinating spices inside and salting the outside of the chicken will help the spices soak evenly and make the skin puffed and crispy, very appealing.Let the chicken marinate for 1 hour.
While waiting, you can pound or blend 2 tablespoons of coarse salt and 2 chili peppers to make dipping salt for the chicken.

Grilling the chicken
Place the chicken in the air fryer, remember to turn the chicken breast side up so that the seasoning does not fall out and the chicken does not get burnt.
Before you start frying, pour a little water into the tray below (do not pour it on the chicken), so that when grilling, the fat that drips down does not smoke and make the dish less delicious.
First, grill at 190 degrees Celsius for 10 minutes to make the outer skin golden and the meat fresher, juicier. Next, reduce the temperature to 180 degrees Celsius and grill for another 10 minutes for the meat to cook evenly and become tender.
Then, flip the chicken over, check if there are any lime leaves stuck to the chicken body. If there are, remove them to prevent the dish from burning.
Continue grilling at 180 degrees for 35 minutes. This way, the chicken is evenly cooked and extremely tender.
Tip: If you do not have an air fryer, you can grill the chicken using charcoal or an electric grill as well. -
