How to choose yogurt starter
- You should choose yogurt that is closest to the production date. At this time, the lactic acid bacteria in the yogurt will be strong and easily produce enzymes to make the yogurt delicious and successful.
- If using homemade yogurt as a starter, use yogurt that has been made within 1 week to ensure the active bacteria are functioning well.
- The yogurt used as a starter must be brought to room temperature before use.
How to choose good chicken eggs
- Eggshell: For industrial chicken eggs, you should select those with dark brown shells, uniform color, no cracks, and no black spots. For local chicken eggs, choose those that are pale and slightly white.
- When touching the surface of the egg, if it feels rough and slightly gritty, it is fresh chicken egg; if the surface is smooth, it has been stored for a while.
- Hold the egg up to the light or sunlight, if you see a small air cell, the yolk is round and balanced in the center of the egg, with a light orange or pink color, and the white is clear, then it is a fresh chicken egg.
- You can hold the egg near your ear and shake it gently. If you hear a sound, it means the egg has been stored for a long time; if there is no sound, it is a fresh chicken egg.

Mix the egg milk mixture
You crack 2 chicken eggs, separate the yolks and put them in a bowl. Next, add about 30ml of condensed milk to the chicken egg yolks, and use a whisk to blend. Then, add 300ml of hot water and stir well to cook the eggs.
Tip:- If you want the egg flavor in the yogurt to be stronger, you can increase it to 3 egg yolks!
- You should only stir in one direction to make the yogurt smooth and not separate.

Add yogurt to the milk mixture
You continue to add the remaining condensed milk (about 270ml) into the egg milk bowl, stirring until dissolved. Then, gradually pour in 500ml of unsweetened fresh milk, pouring while stirring continuously.
You put the pot on the stove, pour the milk mixture in to heat. After the milk mixture has blended and is warm at about 45 – 50 degrees, add 2 cups of yogurt, stirring in one direction to dissolve the yogurt.
Tip- If you use unsweetened yogurt to make yogurt, just add 1 cup.
- Do not add yogurt when the milk is still too hot. The lactic acid bacteria in yogurt work optimally at temperatures around 43 – 45 degrees Celsius. Therefore, if you add it when the milk is too hot, it will kill the bacteria and cause your product to separate.

Pour yogurt into jars
Before pouring yogurt into glass jars, you should briefly dip them in boiling water to sterilize the utensils, helping to eliminate bacteria to prevent the yogurt from becoming slimy, then let them dry!
After that, slowly pour yogurt into each jar, then cover the lids and take them for fermentation.

Ferment yogurt
You place a layer of cloth inside the cooler, then gently arrange each jar of yogurt, and cover it tightly with the cloth.
Next, pour about 100ml of hot water at around 50 – 60 degrees onto the cloth so that it is slightly wet and warm. Cover the cooler’s lid and let it ferment for about 12 – 15 hours.
Tip:- If the temperature in your area is a bit low, you can place a 25w yellow bulb inside the cooler to keep the yogurt fermentation process warm.
- The most important thing when making yogurt to avoid sliminess and spoilage is to keep the yogurt at a temperature of 43 – 45 degrees Celsius, which is also the optimal temperature for the yogurt culture to grow and operate.
