- Aiyu seeds are a type of seed from a wild plant growing in the mountainous area of Trung Khanh district, Cao Bang province in our country.
- When dried, Aiyu seeds have a light yellow color and a distinct, attractive aroma that is loved by many and used to make the famous Aiyu Jelly dish.
- Currently, you can easily buy Aiyu seeds at Cao Bang specialty shops or on major and reputable e-commerce platforms.
- The market price for Aiyu seeds ranges from 300,000 to 400,000 VND/kg (price updated in October 2021)
How to Prepare Aiyu Jelly

Massage the seeds
First, place the sifted seeds into a cloth bag and tie the bag securely.
Next, add 700ml of warm filtered water (2.5 cups of rice) into a bowl and immerse the bag containing the mác púp seeds.
Massage vigorously for about 5 – 8 minutes until the water in the bowl gradually turns yellow, then remove the bag.
Use a sifter to remove any residue on the surface of the water to make the mixture visually appealing.

How to make Mango Aiyu Jelly

Prepare the mango
Wash the mango thoroughly, drain it, slice it, and then use a knife to cut the flesh of the mango into small square pieces.
Next, hold the cut mango piece, use your two middle fingers to push the center of the mango up so that the mango pieces protrude, then use a knife to cut the flesh of the mango into a bowl.

Blend the mango
Put all 250g of the chopped mango into a blender, then start the machine and blend at medium speed for about 3 minutes until the mango is smooth.

Cook the Mango Aiyu Jelly
Boil 1 liter of water, then add 25g of Aiyu jelly powder, stir well, and continue cooking for about 2 more minutes until the jelly powder is completely dissolved.
With one hand stirring, slowly pour in the blended mango mixture with the other hand. Stir continuously until the Mango Aiyu jelly mixture is evenly colored, then turn off the heat and let it cool.

Strain the mixture and pour into molds
After the mango aiyu jelly mixture has cooled, use a strainer to filter out the remaining mango pulp and pour the smooth jelly mixture into molds.
Wait about 15 – 20 minutes for the jelly to set, then use a knife to cut it into small bite-sized squares.

For decoration, we just need to arrange small pieces of mango, cooked white tapioca pearls, and 50ml of coconut milk or sweetened fresh milk along with a sprig of fresh mint on top.
