What is chia seed?
Chia seeds are the seeds of the Salvia Hispaniola plant, which is native to southern Mexico. The countries that grow the most chia seeds and produce the best quality are Australia and the USA due to their extremely suitable climate and soil for this plant variety.
Typically, chia seeds are small, flat, oval-shaped, averaging 2.1 mm × 1.3 mm × 0.8 mm in size and weighing about 1.3 mg. The seeds can be white, brown, gray, or black; when in contact with water, they absorb it and form a gelatinous layer around the seed.

Chia seeds are not yet grown in Vietnam, so you can look for this type of seed in supermarkets, reputable food stores specializing in foreign goods, or on e-commerce sites. Depending on the origin and type of seeds, the price ranges from 250,000 VND to 300,000 VND per kg (price updated on February 26, 2021).
How to prepare Chia Seed Jelly Milk Tea

Soak chia seeds
Place the chia seeds in a bowl of cold water and soak them for about 15 minutes until they expand.
Note: Do not soak chia seeds in hot water as the temperature will destroy the nutrients contained in the chia seeds.

Prepare milk tea for jelly
Add 2 packets of matcha milk tea powder (about 34gr) into a cup with 100ml of hot water and stir well to dissolve the powder in the water.

Heat the jelly mixture
Add 650ml of water and 15gr of agar powder to a pot and use a ladle or whisk to dissolve the powder, then let it soak for 30 minutes.
Tip: Soaking the agar before cooking will help the jelly cook quickly and expand evenly.
After soaking for 30 minutes, turn on the heat to warm it up, stirring regularly with a ladle. When the water reaches a temperature of about 80 degrees Celsius, add the milk tea mixture prepared in step 2 along with 100ml of condensed milk, 150gr of fresh cream, and 1 vanilla pod for aroma, and stir until the mixture is dissolved for about 5 minutes before turning off the heat.
When the mixture cools slightly, add 1/2 of the soaked chia seeds. Then pour it into a mold and place it in the refrigerator to freeze the jelly.
Tip: Adding chia seeds when the mixture cools slightly will help the chia seeds float to the surface, preventing them from sinking to the bottom and retaining their nutrients.

Prepare milk tea to serve
Pour 80ml of boiling water into a cup, add 2 sachets of milk tea powder and stir until dissolved. You can taste and adjust to your liking.

Completion
When the milk tea cools down, add ice cubes, the remaining soaked chia seeds, and scoop the frozen jelly pieces into the cup.
Garnish with a few mint leaves and enjoy right away.

How to Store Chia Seed Jelly Milk Tea
