- Choose chickens that are pink-red in color, with no bruises or blood clots on the skin. Avoid buying those with dark skin as they are chickens that died before slaughtering.
- When choosing chickens, select those with a slender body, light yellow skin, thin, smooth, high elasticity, with dark yellow only in certain areas such as the breast, wings, and back.
- Press on the thighs and breasts to check if the chicken has been injected with water. If the chicken feels mushy, slippery, or deformed, do not buy it.
- When buying frozen chicken, choose reputable supermarkets or stores to ensure safety.

Prepare the chicken
Buy pre-processed chicken from the market. To eliminate the unpleasant odor of the chicken, use a little salt and white wine to rub the chicken for about 10 minutes, then rinse it with water several times.
Cut a lemon in half and rub it on the chicken. Mix together 2 tablespoons of turmeric powder and 2 tablespoons of chili powder, and evenly coat the chicken.

- Use crushed ginger to rub on the chicken for about 10 minutes, then rinse it with water several times.

Prepare the chicken marinade
Pound 4 cloves of garlic and 2 small chili peppers, add 1 tablespoon of seasoning, 3 tablespoons of soy sauce, and 2 tablespoons of fermented bean curd, then mix well.
