How to choose good fresh shrimp
- Choose shrimp that have a natural, uniform color, and no unusual odors.
- The tail of the shrimp should be slightly curled, and when touched, it feels firm. If the tail is curled and soft, those are spoiled shrimp, which should not be purchased.
- Avoid choosing shrimp that have overly tight backs, with the back segments stretched out, as these may have been treated with chemicals and are unsafe.
How to Make Shrimp Paste

Prepare the shrimp
Fresh shrimp should be washed briefly with water, placed in a basket, and cleaned to remove all sand and debris.
Then, pour a little white wine into the bowl containing the shrimp, gently squeeze for about 3 minutes, and then rinse again with clean water. Finally, place the shrimp in the basket to drain.

Prepare other ingredients
Peel the garlic and slice it thinly. Remove the stems from the chili, wash it clean, and then slice it.

Cook the marinating fish sauce
Place a pot on the stove, turn on medium heat, add 2 cups of sugar and 4 cups of fish sauce to the pot, then stir well until the sugar completely dissolves.
Wait for the fish sauce to boil, then turn off the heat and let it cool.
Tip: To make the fish sauce more flavorful, you should skim off the foam.

Soaking the fish sauce
Put fresh shrimp paste into a large jar with garlic and chili. Next, slowly pour in the fish sauce mixed with sugar and cover the jar, then wait until morning to sun-dry for about a week to use.
After that, you can store this shrimp paste in the fridge refrigerator and use it gradually.
