Prepare the ingredients
Peel and wash the cassava when purchased, then chop 1/2 of the cassava and squeeze out the juice to keep the pulp for mixing as filling. Finely chop 4 prepared shallots.
Put 200g of minced meat and 100g of pork paste into bowl, then add the chopped 1/2 cassava and the finely chopped 4 shallots. Next, gradually add the spices: 1 tablespoon of seasoning, 1 tablespoon of sugar, 1 tablespoon of pepper, 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of fried shallots. Mix all the ingredients and spices together until well combined, then let it sit for about 20 minutes for the spices to soak in.
Next, turn on the stove and use steamer pot to steam the meatballs; shape the marinated meat into bite-sized balls and steam over medium heat for about 15 minutes.

Cooking the broth
To cook the broth, first add 2 tablespoons of annatto oil into the pot along with 2 finely chopped lemongrass stalks and stir well to release the fragrance.
