How to choose fresh beef
- For this dish, you should choose brisket or flank beef, as this part of the meat is usually tender, moderately thick, crunchy, very fragrant, and lightly fatty, with a bit of marbling.
- You should select pieces of beef that have bright red color, clear marbling, and the fat should be a bright yellow.
- When you gently touch the piece of beef, you will feel a moderate tenderness and good elasticity.
- You should not buy pieces of meat that have a foul smell, are mushy, have round white spots between the fibers, and have a pale green color, as these indicate old beef that is no longer usable.
How to choose good quality chicken eggs
- Choose eggs with thick shells, not too large, as they are usually fresher than those with thin, large shells. If you notice that the egg’s shell is too smooth and shiny, it indicates that the eggs have been stored for a long time.
- For eggs with hard outer shells, check if there is a thin layer of powder around the shell; if so, the eggs are fresh.
- To check if the eggs are still fresh, shake them gently; if there is no movement, the eggs are fresh, and if there is strong movement, the eggs are old.
- Currently, there are fake chicken eggs, bleached chicken eggs, and Chinese chicken eggs on the market, so make sure to buy eggs from reputable markets, stores, or supermarkets to ensure the quality of the eggs!

Prepare ingredients and marinate the beef
Red onion and shallots are washed, peeled, and then minced. Fresh herbs are washed and drained. Turmeric is peeled, washed, and then crushed. Eggs are boiled in hot water until cooked, then peeled.
Quang noodles are briefly blanched in boiling water. The beef you buy should be massaged with salt for about 5 – 10 minutes, then washed clean with water and drained.
How to clean beef without a smell
- Method 1: Soak the beef in white wine for 15 minutes and then rinse with clean water.
- Method 2: Put the beef in a pot of water, heat for about 3 – 5 minutes, then take it out and rinse again to reduce the smell. Note that you should only heat it to about 50 degrees Celsius, not boil it.
- Method 3: Use lemon or vinegar to rub on the beef for 5 – 7 minutes, then rinse with clean water.
- Method 4: Roast a piece of ginger, then crush it, rub it on the beef, and rinse it clean.

Use a knife to slice the beef into thin pieces and place them in a bowl. Marinate the beef with 1 tablespoon of fish sauce, 1/2 teaspoon of salt, 1 tablespoon of seasoning powder, 1/2 teaspoon of ground pepper, all the minced red onion, and crushed turmeric mixed evenly and let it sit for about 15 – 20 minutes.

Cooking Quang Noodles
Place a pan on the stove, add 1 tablespoon of cooking oil and heat it up, then add the minced shallots to sauté until fragrant. When the shallots release their aroma, add the beef and stir-fry over high heat until the meat is seared.
Next, add about 2 bowls of boiling water (approximately 2 liters) into the basin used to marinate the beef earlier, swirl it around, then pour the water into the pan, cooking over low heat for another 5 – 10 minutes to make the beef more tender.
After that, drop the eggs in and cook for another 5 minutes. Add 1/2 teaspoon of monosodium glutamate, and season to taste. Finally, add the chopped green onions, stir well, and turn off the heat.

Place the Quang noodles into a bowl, arrange the beef, eggs, and fresh herbs on top, then pour just enough broth over to eat. Sprinkle a little roasted peanuts and green onions on top, then enjoy.
