  • Prepare the ingredients

    First, use a knife to cut the dried mackerel lengthwise down the belly, then remove the bones.

    Next, peel the garlic and shallots, then finely chop the garlic and slice the shallots thinly. For the bird’s eye chili, remove the seeds and then chop finely as well.

    Put a pan on the stove with 300ml of cooking oil over medium heat. When the oil is slightly bubbling, add 1kg of dried fish and fry for about 10 – 13 minutes, until it turns golden brown on both sides, then turn off the heat and transfer it to a plate.

    Tip: To avoid burning the fish and not making it crispy, don’t use too little oil; it should cover the fish surface.

    Next, heat another pan on the stove with the remaining 15ml (1 tablespoon) of cooking oil, 2 crushed garlic cloves, and 2 minced chili peppers, along with 2 sliced shallots until fragrant.

    Then, add in 4 tablespoons of fish sauce, 1 tablespoon of crushed roasted peanuts, 30g of palm sugar (1 piece), and 1 teaspoon of vinegar.

    Stir well for 5 – 7 minutes, then add in the remaining 1kg of dried fish and stir for another 5 – 7 minutes, until the fish has absorbed the sauce evenly. Season to taste, turn off the heat, and transfer to a plate.
