How to choose good beef tripe

  • You should buy beef tripe in the early morning, when the cow has just been slaughtered, to choose fresh tripe. Avoid buying in the afternoon as the tripe will become soft, not chewy, and have a strong odor.
  • Fresh and delicious tripe, not treated with chemicals, still has the black membrane layer, slightly bumpy (not cleaned) or has a natural pinkish-white color (cleaned).
  • The tripe is thick, with a very distinctive smell, feels firm in hand, and you can still feel its sliminess when touched.
  • A piece of beef tripe weighs about 800g – 1kg, which is considered good tripe, harvested from large, healthy cows.

How to choose fresh, delicious pineapples

  • Feel by hand: if the pineapple is overripe, it will feel soft when you pick it up. The skin of an overripe pineapple will be wrinkled. In contrast, fresh, delicious pineapples will not be too hard or too soft; if you press your finger into it, there should be no indentation.

  • Pineapple eyes: the larger and sparser the eyes, the better. Because after peeling the eyes, you will have thick pineapple flesh, and large, sparse eyes indicate that the pineapple is mature and ripened naturally, not soaked in chemicals.

  • Aroma: you can smell the aroma at the bottom of the pineapple to test its freshness and ripeness. If you detect a sweet smell, you should choose it; avoid those with little or no smell as they are not ripe. Also, do not choose those with a slightly sour smell, as they are overripe.

  • Pineapple crown: the greener the color, the fresher the pineapple. If the pineapples are overripe, the crown will be dry or turn brown.

How to choose fresh, delicious tomatoes

  • Based on color: you should choose tomatoes with bright red, evenly colored skin. The skin should be intact, without scratches, and plump, indicating fresh tomatoes.
  • Based on aroma: naturally ripened tomatoes usually have a mild fragrance that is easily noticeable when smelled. In contrast, those that are artificially ripened do not have any fragrance.
  • Based on the stem: you should choose tomatoes with the stem still attached and fresh, not wilted. Naturally ripened tomatoes often have a stem firmly attached to the top of the tomato.

How to prepare Beef Book Stir-fried with Pineapple

  • Prepare the beef book

    You put about 2 spoons of salt into the beef book and squeeze and rub it hard to remove dirt. Then you rinse it thoroughly with water and pour in about 100 ml of fruit alcohol and soak for about 5 minutes to help eliminate the odor of the beef book.

    After soaking for 5 minutes, continue to squeeze and rinse with water 2 – 3 more times to ensure the beef book is really clean.

    How to prepare the beef book to be clean and odorless
    • Method 1: Soak the beef book in a mixture of vinegar and salt, then add baking soda and soak for 3 – 5 minutes, then squeeze it hard and evenly to remove dirt and odor. If the beef book still has a black membrane, you can use a knife to scrape it clean.
    • Method 2: Use betel lime to rub on the surface of the beef book, then soak for 5 – 10 minutes. Use a knife to scrape off the black layer, repeat the rubbing until the black membrane is completely removed, then soak in a mixture of lemon juice and diluted salt for 10 – 15 minutes, squeezing evenly to eliminate dirt and odor.
    • Method 3: You can also blanch the beef book in boiling water for about 5 – 8 minutes to soften the black membrane. Then rinse with cold water and use a knife to scrape off the dirt and black spots of the beef book. After scraping clean, rinse thoroughly and let it drain.

  • Marinate the beef tripe

    After cleaning the beef tripe, cut it into bite-sized pieces, then marinate the beef tripe with a little minced ginger, a few slices of chili, 1 teaspoon of seasoning powder, and 1 teaspoon of fish sauce. Then mix well and marinate the beef tripe for about 15 minutes.

  • Prepare other ingredients

    Wash the tomatoes and cut them into wedges, slice the chili thinly, peel the pineapple and cut it into thin bite-sized pieces. Wash the celery and cut it into bite-sized sections. Peel the ginger and mince it.

  • Stir-fried beef tripe

    You add into the pot 1 tablespoon of annatto oil, ginger, and stir-fry briefly for about 1 minute. Then you add the tomatoes and stir-fry for about 2 minutes over medium heat. Next, you add the pineapple and continue to stir evenly. You add the beef tripe into the pot and stir-fry for about 15 minutes over medium heat.

    Finally, you season with 1 teaspoon of seasoning powder, then add the celery and stir for about another 1 minute before turning off the heat.
