How to make Colorful Beef Porridge
-
Prepare the rice
Put 90g of rice into a medium bowl, rinse it twice with water, and soak it in clean water for about 30 minutes before cooking the porridge.
Tip: Soaking rice in water helps to cook the porridge faster and makes it softer. -
Prepare the beef
If you are meticulous, after buying the beef, you can rinse it quickly and let it drain. Then, use a knife to cut it into small pieces, and put it into a meat grinder to grind it finely.
Tip on cutting beef to avoid toughness:
- First, identify and recognize the muscle fibers of the beef you bought.
- Then, use a sharp knife to cut across the muscle fibers to retain the sweetness of the meat and prevent it from being tough.
-
Prepare other ingredients
Other vegetables, wash them clean and prepare as follows:
- Onion: peel and finely dice.
- Carrot: peel the skin, cut into small cubes.
- Bell pepper: use 1/2 of a yellow bell pepper and 1/2 of a red bell pepper, remove the seeds and dice finely.
- Broccoli: take the florets from the top, cut the florets vertically into pieces and then dice them into moderate-sized cubes.
- Garlic: peel, crush, and mince.
-
Stir-fry the ingredients
First, rinse the rice (that has been soaked) briefly under running water and drain.
Add about 2 tablespoons of cooking oil to the pot on the stove over medium heat to begin stir-frying the beef. While stir-frying, use a spoon to break up the beef, and stir-fry until the meat firms up, then add the minced garlic and prepared onion, and stir-fry the mixture for about 2 minutes.
Next, add all the drained rice to the pot, stir-frying the mixture continuously until the rice grains start to dry out and turn slightly yellow.
Finally, add the prepared vegetables and stir-fry together, mixing the ingredients for another 2 minutes.
Tip: When adding the vegetables, stir-fry over high heat to prevent them from releasing too much water. -
Cooking the porridge
You measure 1.7 liters of water and pour it into the mixture pot (made in the previous step), stir the mixture well and cover, cooking it on high heat.
When you see the water boiling, stir the mixture again and reduce the heat to low, cooking until the rice grains are soft and expand into the porridge as you desire. At this point, add 2 tablespoons of fish sauce (or seasoning according to your taste), then turn off the heat.
Meanwhile, take a piece of seaweed (commonly used for sushi), lightly toast it until crispy on the stove and place it in a plastic bag to crush it.
