How to choose fresh and delicious ingredients
How to choose clean, safe pork bones
- Fresh pork bones usually have a light red color, not darkened, and not slimy.
- A good piece of bone usually has a thick layer of meat surrounding it, with both lean and fatty parts.
- You should choose bones with firm meat, not cold.
- Do not choose bones that are too large as they are usually from sows, while those that are too small may come from sick pigs that need to be slaughtered quickly. Buying these types of bones will result in a less tasty broth.
How to choose fresh and delicious radishes
- Fresh and delicious radishes will have leaves firmly attached to the root, bright green leaves, and a crisp skin.
- You should choose radishes with smooth skin, intact, and without scratches.
- Choose radishes that still have roots attached, as these are fresher and ensure quality.
- Avoid choosing radishes that are too large, with a very soft body; large radishes tend to be bland and fibrous.

How to choose fresh chayote
- Fresh young chayote is green, without dark spots, and you should choose chayotes with fewer angles for easier processing.
- Avoid choosing chayotes with insect bites or dark spots as they are damaged.
- You can check young chayotes by pressing on the skin; if the chayote is still fresh, it will be soft and easy to press, while if it is tough and hard to press, it is definitely an old chayote that will not taste good.
How to make radish bone soup
-
Prepare the ingredients
Pork bones should be washed to remove blood after purchase. To eliminate the smell of the bones, rub them with white wine and salt. Then rinse again 2 – 3 times with clean water and let them drain.
Peel the radish and chayote, wash them clean, and cut them into pieces about ½ finger thick. Peel and finely chop the garlic.
-
Stir-fry the pork bones
Add 1 spoon of cooking oil to a pot, heat the oil, then add the chopped garlic and sauté until fragrant and golden.
Next, add the cleaned pork bones and stir-fry quickly over high heat for 2 – 3 minutes until the meat on the bones tightens.
Season the mixture with: 1 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1 tablespoon of sugar, and 1 teaspoon of ground pepper, and stir well over medium heat for about 5 – 7 minutes to let the meat absorb the seasoning.
-
Cook the pork bone radish soup
Add 1 liter of water into the pot, to keep the soup clear and fragrant, for the first 10 minutes, keep the heat high, let the water boil vigorously, then skim off the foam, then reduce the heat and simmer the bones for 30 – 35 minutes.
Next, add the radish and chayote, cook for another 10 minutes, then season with 1 tablespoon of fish sauce, adjust the spices to suit your family’s taste.
Finally, add the chopped green onions and turn off the heat.
