How to choose fresh ingredients

How to choose fresh perch

  • Choose live perch that swim well, with clear eyes visible to the pupils.
  • At the same time, when pressed on the meat, it should feel firm, not mushy, and have a good elasticity like rubber.
  • Fresh fish has a cherry color, while brownish or dull colors indicate that the fish has spoiled and cannot be used.
  • Avoid selecting fish with swollen bodies, weak swimmers, and pale colors as these are fish that have been left for too long.
  • Perch is freshwater fish, so it will smell like pond water. Avoid buying those with a strong, fishy odor.

How to choose good sticky rice for making xôi

  • Good sticky rice has opaque white grains that are uniform and glossy; when you smell it, you can sense a light aroma of fresh sticky rice.
  • Additionally, good sticky rice will have a light sweet taste when you taste the raw grains, and you should choose to buy sticky rice from reputable, quality sources.
  • Avoid buying sticky rice when you see the grains have turned a light yellow color, and when you smell it, it has a very strong aroma, as this type of sticky rice may have been treated with chemicals for longer preservation.

How to Prepare Sticky Rice with Wild Carp

  • Prepping the Carp

First, for the carp you bought, use a knife to scrape off the scales, then cut off the gills, entrails, and any congealed blood remaining inside the belly.

Next, rub a bit of salt on the surface of the fish for 3 – 5 minutes, then rinse with clean water 2 – 3 times and let it drain.

How to Prep Carp Without a Fishy Smell
    • Method 1: Use lemon juice mixed with warm water to soak the fish for 5 – 7 minutes, the fishy smell will disappear immediately.
    • Method 2: Soak the fish in salt water for 5 – 10 minutes or rub salt on the fish body, which not only eliminates the smell but also effectively removes the slime.
    • Method 3: Additionally, don’t forget that just putting the fish in rice washing water for 15 – 20 minutes works well.
    • Method 4: Moreover, bruised ginger mixed with water to soak the fish for 5 – 7 minutes will show immediate results.
    • Method 5: You can also use diluted alcohol or white vinegar to soak the fish for 5 minutes.
    • Method 6: Housewives often use fresh milk to eliminate odors, which will surprise you greatly.

  • Boil the fish

After preparing the fish, you place a pot on the stove with 300g of pond catfish, 400ml of water, 1 teaspoon of seasoning, and 1/2 teaspoon of monosodium glutamate, then boil the fish on low heat for about 15 – 20 minutes until the fish is soft, then turn off the heat and transfer to a plate.

Then, use your hands to separate the fish meat from the bones.

Tip: To make the dish tastier, be careful when tearing the fish so that it remains intact and does not get mashed.

    Tip:
    • To prevent bone fragments from affecting the flavor of the dish, you should grind and filter very carefully!
