How to choose fresh carp
- It is advisable to choose live carp that are thick and plump.
- Choose carp with dark gray scales as they are river carp and will taste great.
- Avoid buying spawning carp as they will be skinny, and the meat will not taste good anymore.
How to choose delicious mung beans
- Choose mung beans that are uniform in color, shiny, and have a natural aroma.
- You can check the ripeness of the beans by pressing your finger on the bean; if the bean is crunchy, breaks easily but does not create many small fragments, then it is a good mung bean.
- Fresh mung beans often have a light, characteristic aroma. Avoid choosing beans with a musty smell or strange odors.
- Avoid selecting beans that have black spots, dull colors, or uneven sizes. Especially do not choose mung beans that show signs of being eaten by termites or have many black impurities.
- You can buy whole mung beans and shell them at home or purchase pre-shelled mung beans.

How to prepare Green Bean Fish Porridge

Prepare the carp
After purchasing the carp, you clean the scales, remove all the internal organs, and scrape off the black skin inside the belly of the fish.
Next, to remove all the slime from the carp, you crush 1 piece of ginger and mix it with a little warm water, then rub the fish with the ginger water along with salt.
Then, rinse the carp with clean water and cut the fish in half into small pieces.
How to clean carp effectively, without fishy smell:
- Use salt to rub the entire body of the fish for about 2 minutes, then rinse with water; the fishy smell will disappear.
- Soak the fish in a diluted saltwater mixture for 10 – 15 minutes, then rinse with water to completely eliminate the fishy smell.
- You can also soak the fish in rice washing water for about 15 minutes; the rice washing water effectively removes the fishy smell from the fish.

Prepare the other ingredients
Mix 100gr of regular rice, 50gr of sticky rice, and 50gr of mung beans, then rinse well and soak in water for 40 minutes to let the rice and beans soften.
Next, wash and chop the green onions, cilantro, and fresh chili.
For the shallots and garlic, peel, wash, and then finely chop them.
Note: Do not use chili or pepper if the child cannot eat spicy food! -
Fry and separate the fish meat
Place a pan on the stove and add 2 tablespoons of fat. Wait for the fat to boil and completely melt, then add the fish and fry over medium heat for about 3 minutes.
After that, turn off the heat and take the fish out. Wait for the fish to cool down a bit, then proceed to separate the fish meat.
Note: Make sure to carefully separate the fish to avoid small bones mixing with the meat!

Pound and filter the fish bones
Put the carp fish bones into a mortar and use a pestle to pound them finely. Next, pour 500ml of boiling water into the mortar and stir well, then strain the broth from the fish bones.

Cook the porridge
To cook the porridge faster, after soaking, take the mixture of rice and beans out and blend them into a fine mixture.
Then, add the blended mixture of rice and beans into the pot, along with the filtered water from the fish bones and another 1.5 liters of water, then turn on the stove to cook.
Tip: Cook the porridge over medium heat and stir it with chopsticks to prevent it from burning.Next, season the pot of porridge with 1 teaspoon of seasoning powder, 2 tablespoons of fish sauce, and 1/2 teaspoon of pepper. Cook the porridge for about 30 minutes until the grains are soft and expanded.

Stir-fried fish meat
Utilize the pan that just fried the fish, then place the pan on the stove, wait for the oil to heat up, then add finely chopped shallots and garlic to sauté until fragrant.
Next, add the fish to stir-fry and season with 1/2 teaspoon of seasoning powder, 1/3 teaspoon of pepper, and 1 tablespoon of fish sauce. Stir-fry the fish over medium heat for about 3 minutes, until the fish is dry.

When the porridge is cooked and soft, scoop the porridge into a bowl, then place the fish on top and prepare for the baby to enjoy!
