Wash the chicken with diluted salt water, then let it drain.
How to prepare chicken without odor:- First, you need to remove the oil gland at the chicken’s tail and clean any remaining feathers to avoid an odor when eating.
- To effectively eliminate the odor of the black chicken, use a mixture of alcohol and vinegar to wash the chicken, then soak for about 5 – 10 minutes, and rinse thoroughly with water.
- You can also crush a piece of ginger and put it in the alcohol, soak the chicken for about 10 minutes, then remove and rinse with water.

Put the pot on the stove, add 1.2 liters of water, then add the chicken to boil along with the smashed lemongrass, ginger, and sliced shallots, seasoning with 1/3 teaspoon of monosodium glutamate. Boil the chicken for about 15 – 10 minutes over medium heat.
When the chicken is cooked, take it out and place it in a bowl of cold water for about 5 minutes, then remove it and let it drain. After that, you can chop it into small pieces or shred it as you like. Save the chicken broth to cook porridge.

Soak the black beans in warm water for about 15 minutes, then rinse them clean, discarding any spoiled or shriveled beans.
