- For pre-prepared chicken, you should choose those that are not too big or too small. Good chicken will have skin with a characteristic golden color. The outer layer of skin is thin, tightly adhered to the meat, and has good elasticity.
- You should choose chickens with naturally pinkish-white meat, firm texture, not dry or mushy.
- Do not buy chicken meat that has bruises or blood clots, parts with slightly pale or dark gray colors, as it will not guarantee safety when consumed.

- You should choose fresh bamboo shoots, with a coarse shape, evenly sized segments, crisp but tender, no yellow leaves, surface without spots, thin skin, and not wilted.
- Choose bamboo shoots with thin skin, when pressed with a fingernail, they feel crisp, juicy, and have a light sour aroma.
- Do not choose overly white bamboo shoots; they should have a yellow-brown color, feel dry to the touch, and have some streaks.
How to choose fresh straw mushrooms
- You should choose mushrooms that are still in bud, not yet opened, fresh, with a slightly round or cylindrical shape, preferably selecting straw mushrooms of uniform size.
- In addition, choose straw mushrooms that are black or gray, as they taste better than the white ones. When touched and squeezed gently, they should feel slightly firm.
- Do not choose straw mushrooms that show unusual signs, with opened buds, and especially if they have a sour or unpleasant odor.

How to Prepare Spicy Bamboo Chicken Hotpot

Prepare and Marinate the Chicken
To save time, you should buy pre-prepared chicken from the market or supermarket. With pre-prepared chicken, first, mix vinegar with salt and apply it evenly on the chicken or you can soak the chicken in that mixture for about 3 – 5 minutes.
Then rinse it several times with clean water, and cut the chicken into bite-sized pieces.
Next, place the chopped chicken into a bowl or large pot for marinating. Add half of the minced onion and garlic to the bowl, then add 1 tablespoon of chili powder, 1 teaspoon of red food coloring (or annatto oil), 1 teaspoon of five-spice powder, 1/2 teaspoon of salt, 1 teaspoon of sugar, and 1 teaspoon of seasoning powder.
After that, use chopsticks to stir the chicken thoroughly to absorb the spices and let it marinate for about 15 minutes.
Effective Ways to Remove Chicken Odor
- Method 1: Prepare a mixture of vinegar mixed with salt (in a 2:1 ratio), and use your hands to rub it over the entire chicken for 3 – 5 minutes, then rinse several times with clean water.
- Method 2: Use a mixture of lemon with a little salt and rub it over the chicken in the same way as above.
- Method 3: Crush ginger and rub it over the surfaces of the meat along with white wine, then rinse again with water.

Prepare other ingredients
Wash the tomatoes and cut them into quarters. Peel the onion and cut it lengthwise into thin slices.
For the lemongrass, peel off the tough outer layer, cut off the green tops, and then crush it with a knife.
For straw mushrooms, cut off the stems (which often have dirt), soak them in salt for about 10 minutes, then rinse them with water and cut the mushrooms in half.
Wash the cilantro, tear it into small pieces, and rinse it thoroughly with water.
Fresh bamboo shoots should be peeled, soaked in salt for 30 minutes, then boiled in hot water 2 – 3 times, rinsing with clean water each time, and finally cut into thin slices.

Stir-fry the chicken
Next, you heat a pan on the stove and add 2 spoons of cooking oil, then add the marinated chicken, 4 crushed lemongrass stalks, the remaining minced onion and garlic, 1 onion, and 2 chopped tomatoes to stir-fry for about 5 minutes over medium heat until the chicken is firm, then turn off the heat.
Use another pot to heat 1 tablespoon of cooking oil, then add 1 tablespoon of chili powder along with the stir-fried chicken, stirring over medium heat for 2 minutes.

Next, pour water into the pot so that it covers the chicken and cover the lid, cooking until the chicken is tender for about 10 minutes.
Then, add 200g of straw mushrooms, 1 tomato, and 200g of bamboo shoots, topping with about 100g of cilantro and boiling for another 10 minutes to complete.
