How to choose fresh ingredients
How to choose fresh chicken
- You should choose local chicken for a better hot pot, as they have firm meat, chewy skin, and delicious flavor.
- You can select a whole chicken or have it plucked for convenience in preparation.
- Fresh chicken will have a light yellow color, and when pressed, it feels elastic, with firm skin.
- Observe the cut on the chicken’s neck; if it’s freshly slaughtered, the cut will still have blood; you should consider buying it.
- Do not choose chicken with pale or white skin or meat, and skin showing signs of peeling, as these are often old chickens that have been stored for a long time or treated with chemicals.
- If you find the chicken meat is soft, smells strange, or has a slimy mouth, you should not buy it, as it is usually sick chicken.
How to choose fresh carrots
- Fresh carrots usually have a bright orange skin, vibrant color, straight and elongated body.
- Pay attention to the leaf stem at the top of the root; if the stem is still fresh, this is a newly harvested carrot.
- Choose carrots of moderate size, not too large, as larger carrots often use more growth hormones or are older.
- Do not buy carrots if you see the skin wrinkled, missing the leaf stem, or the leaf stem is wilted, as these are carrots that are about to spoil and should not be used.
How to choose good shiitake mushrooms
- For fresh mushrooms, you should choose those with intact caps, feeling smooth to the touch.
- Fresh shiitake mushrooms usually have a light fragrance, with the stems having a bit of dirt, and they are bright brown in color.
- For dried shiitake mushrooms, you should select those that have a light aroma when sniffed, are dry, feel smooth to the touch, with whole mushrooms that are not broken and without white powder clinging to the stems.
- You should buy shiitake mushrooms from reputable places with clear packaging and labels to ensure safety when using.
How to make Lemon Grass Chicken Hot Pot
-
Prepare and marinate the chicken
After cleaning the feathers and internal organs, rub the chicken with a little salt then rinse thoroughly under running water, including the outer skin and the inside of the cavity.
Next, let the chicken drain and then cut it into bite-sized pieces.
Marinate the chicken with 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1/2 teaspoon of pepper, 1 teaspoon of sugar, and let it sit for 10 – 15 minutes for the chicken to absorb the spices.

Prepare other ingredients
Peel the shallots and garlic, then chop each type of ingredient finely.
Trim the lemongrass, wash it clean, cut it into pieces about the length of a finger, and then smash it.
Peel the ginger and cut it into strips. Remove the stems from the chili peppers and wash them along with the lime leaves; keep the chili whole, and cut the lime leaves into small strips.
Soak the dried shiitake mushrooms in water for about 30 – 45 minutes until they soften, then wash them clean with water and cut off the mushroom stems.
For fresh shiitake mushrooms, cut off the dirty stems, soak them in diluted salt water for about 10 – 15 minutes, then take them out, rinse them with clean water, and cut them in half.
Peel the carrot and daikon, wash them, and then carve them into flower shapes, each flower slice about 1/2 finger thick.

When the ingredients are aromatic, add the chili and stir-fry for an additional minute over medium heat until the shallots and garlic are golden and fragrant.
Next, add about 2 liters of water, radish, 2 tablespoons of rock sugar, 1 tablespoon of seasoning, 1 teaspoon of salt, 1 teaspoon of oyster sauce, and bring to a boil over high heat.
To keep the hot pot broth clear and fragrant, you should regularly skim off the foam that rises to the surface.
-
Stir-fry the chicken
Add 1 tablespoon of cooking oil to the pan, heat the oil, then add the remaining half of the minced garlic and shallots, and sauté until golden and fragrant.
Next, add the marinated chicken, stir-fry over medium heat for 5 minutes until the chicken is firm, then turn off the stove.
