How to make Hoi An Chicken Rice

  • Boil the chicken

Ask the seller to clean the local chicken, then rub it with salt and rinse it 2 – 3 times with clean water. After that, marinate the chicken with 1 tablespoon of turmeric powder, rub it evenly, and let it sit for about 10 minutes.

Next, place the chicken in a pot, add enough water to cover the chicken, add 1 sliced ginger piece, 5 peeled shallots, and 1 tablespoon of turmeric powder, then put it on the stove to boil over high heat. When the water boils, reduce the heat and cover to boil for 20 minutes.

When the chicken is cooked, turn off the heat, take the chicken out to cool slightly, and tear the meat into bite-sized pieces.

How to prepare Hoi An Chicken Rice (recipe shared by users)

  • Prepare the chicken and boil it

The chicken you buy should be washed clean with diluted salt water for about 5 – 10 minutes. Then rinse with clean water and let it drain.

Place a pot on the stove, add 1.5 liters of water and the cleaned chicken into the pot. Next, add to the pot 1 onion (washed), 1 spoon of salt and 1 spoon of seasoning powder.

Proceed to boil the chicken over medium heat. When the water boils, lower the heat and continue boiling the chicken for about 15 – 30 more minutes, then turn off the heat, take the chicken out and place it in a bowl of cold water to firm it up and prevent it from discoloring.

    Tip:

    • The remaining chicken broth can be used to cook along with the rice.
    • When boiling the chicken, adding salt and seasoning will make the chicken meat more flavorful. Cooking rice with the chicken broth will make the rice fragrant, sweet, and tastier.

Soak 160g of rice for about 15 minutes. After soaking, drain the water and keep the rice.

Next, peel 2 onions, then use a knife to slice the onions into thin, small pieces and soak them in a saltwater mixture for about 15 minutes. Finally, remove the onions and let them drain.

Then, prepare a clean bowl. Add 1 teaspoon of salt, 1 teaspoon of sugar, and 1 teaspoon of ground pepper into the bowl and mix well to make the seasoning for the chicken salad.

Wash the Vietnamese coriander, and slice the chili into small, bite-sized pieces.

  • Cook the rice

Add 1 teaspoon of turmeric powder and the soaked rice into the pot of chicken broth and start cooking the rice on low heat. While cooking, stir the rice continuously so that the grains absorb the turmeric evenly.

Cook until the rice is soft and has a beautiful golden color.

    Tip:

    • You can cook the chicken broth and rice in a rice cooker instead of on the stovetop.
    • For people from Quang Nam, turmeric powder is an essential spice in the kitchen, and this Hoi An chicken rice dish cannot be made without turmeric. This is a unique feature of the Quang Nam people.

How to choose fresh and delicious local chicken

  • Choose chickens that have a compact, sturdy body and a small breast. When you gently press on the chicken’s body, the meat should feel firm and return to its original shape quickly after you stop pressing.
  • Fresh and delicious local chicken has a naturally shiny yellow skin, but it’s uneven, with the wings, breast, and back usually darker in color.
  • You should avoid buying chickens that have scratches or bruises on their bodies, as these indicate poor quality.

The special feature of the dipping sauce in Hoi An chicken rice

  • The difference in Hoi An chicken rice lies in its special dipping sauce compared to other places. The dipping sauce is an essential condiment for Hoi An chicken rice, mainly consisting of freshly sautéed chicken innards fragrant with pepper.
  • To fully experience the delicious harmony of this dish, you must drizzle the dipping sauce and chili sauce directly onto the rice, then mix the entire plate of rice with chicken thoroughly to eat it the Hoi An way.
