  • You should avoid purchasing dill fish that are too pale, swimming weakly and lacking agility, especially those with dark brown gills, as they indicate the fish has gone bad from being kept for too long.

  • Fresh, quality dill has bright green color, not yellowing, and its leaves have grooves running along the stem, especially with a pointed shape at the top.
  • At the same time, when you touch it, the dill should feel soft, not too dry or wilted. When smelling it, you can also sense a gentle, characteristic fragrance.
  • You should limit buying wilted dill that even emits a strong chemical smell as it may be dill that hasn’t grown naturally and has been sprayed with too many chemicals.

  • Prepare the ingredients

    First, with 300g of fish, you use a knife to scrape off the scales, cut off the gills and tail, while also removing any remaining blood and guts inside.

    Then, take some salt and rub it all over the fish meat, then rinse it several times with water to clean it, and let it drain.

    Dill, green onions, and cilantro should have their roots and any wilted or damaged parts removed, then rinse directly under running water until clean, let drain, and then use a knife to cut into bite-sized pieces.
