  • You should choose fish that are still alive, swimming vigorously, have bright colors, clear eyes, and especially have shimmering tiny pink rays along their bodies.
  • Fresh catfish will still be slimy, and their gills will be pink. You can put the fish in water; if it is fresh, it will sink. In contrast, if the fish floats, it is spoiled.
  • Some signs to recognize spoiled catfish: The fish swims weakly, has a swollen body, scales fall off easily, eyes are sunken and cloudy, color is pale or white, flesh is not elastic, the belly and anus are swollen, and there is an unusual foul smell.

How to choose fresh and delicious water spinach (tần ô)

  • To buy fresh water spinach, you should choose bunches that are dark green, appear fresh, and especially are not bruised, wilted, or infested with pests.
  • You can check the freshness of the water spinach by feeling it with your hand and gently pressing the stem. If you find the spinach too hard, you shouldn’t buy it as those are old stems, which may taste bitter. Conversely, if it feels soft, those are young stems, which will be sweet and fragrant.

  • Prepare and marinate the fish

    After buying the fish, clean it, then marinate it with 3 chopped shallots, 1 teaspoon of fish sauce, 1/2 teaspoon of salt, 1/2 teaspoon of ground pepper, and 1/2 teaspoon of seasoning powder. After that, mix well and let it marinate for 20 minutes for the fish to absorb the seasonings.

  • Prepare the water spinach (tần ô)

    200g of water spinach, cut off the roots, remove the old leaves, then wash it thoroughly, and put the greens in a basket to drain.

    First, place a deep non-stick pan on the gas stove, then add 2 tablespoons of cooking oil.

    When the oil is hot, add 5 crushed shallots and sauté until fragrant. Then, pour the marinated fish into the pan, stir gently to sear the fish, and add about 500ml of water into a bowl, bringing it to a boil over high heat.

    Next, add the water spinach and continue to boil for about 5 minutes, then season with 1/2 teaspoon of monosodium glutamate. You can adjust the seasoning to your taste before turning off the heat.

    Finally, just ladle the soup into a bowl, and you have a delicious and refreshing summer soup.
