Prepare the bananas and herbs
For the green bananas, use a knife to cut off both ends, peel the skin, and then cut the bananas into small, bite-sized pieces.
Soak the bananas in water mixed with a little salt and vinegar for about 5 minutes, then rinse them with clean water and let them drain.
Tip:
- To help the bananas maintain their richness and not become mushy when cooked, when peeling the green bananas, you should only peel a thin layer of the outer skin.
- After peeling, you need to soak them immediately in diluted saltwater and vinegar to prevent the bananas from turning dark and becoming bitter.
To clean dirt, wash the tofu with water, drain it, and cut it into bite-sized pieces.

Fry the tofu
Place a pan on the stove, add 2 tablespoons of cooking oil and heat it up, then add the tofu and fry over medium heat until the tofu is golden and crispy on both sides, then remove and let it drain.

Braise with bananas
Reuse the pan used to fry the tofu, add the pork hock mixture and stir-fry for about 10 minutes until it is seared.
Add the meat to a pot, add enough hot water, tofu, and proceed to braise on low heat for 20 minutes until the pork hock is tender. Adjust the seasoning to taste, add perilla leaves, and turn off the heat.
