- There are many types of sticky rice available in the market, but to cook fragrant sticky rice, you should prioritize buying fragrant sticky rice and yellow flower sticky rice at reputable stores and supermarkets to ensure quality!
- Avoid buying sticky rice that has broken grains, is crumbly, or has yellowed grains, as these indicate that the rice has been stored for a long time and will not be fragrant and will be dry instead of sticky.

Prepare the Ingredients
To reduce the unpleasant smell of chicken intestines, first, we will soak the chicken intestines in diluted salt water for about 10 minutes, then rinse thoroughly, drain, and cut into bite-sized pieces.
Effective Tips for Preparing and Reducing the Smell of Chicken Intestines- Method 1: Use a little salt to rub the chicken intestines for about 5 minutes to remove the sliminess, then rinse thoroughly and drain.
- Method 2: Soak the chicken intestines with a little white wine diluted with smashed ginger for about 10 minutes, then rinse thoroughly before starting to cook.
- Method 3: If you don’t have white wine, you can also substitute it with vinegar or lemon and soak for 10 – 15 minutes, then rinse thoroughly and let drain!
Use a knife to cut off the roots and peel the shallots, then wash and slice thinly. Next, place a pan on the stove, add 2 tablespoons of cooking oil, and turn on medium heat.
When the oil is hot, add the sliced shallots and fry for 5 – 7 minutes until the shallots turn golden and crispy, then turn off the heat and transfer them to a plate to drain the oil.
Next, cut off the roots and any yellow or wilted leaves from the green onions, then wash and chop them finely. Reuse the shallot oil from the previous step to make the green onion oil, turn on medium heat to heat the oil again, then add the chopped green onions and stir about 3 times before turning off the heat and transferring the green onion oil to a bowl.
Place the chicken eggs in a pot and add enough water to cover the eggs, then place the pot on the stove, turn on high heat to boil the eggs. Time it so that when the water boils, boil for another 8 minutes, then turn off the heat. Wait for the eggs to cool down a bit, then peel and cut the eggs in half lengthwise.
Peel the garlic, wash it, then chop it finely and place it in a bowl.

Cook the sticky rice
Put the sticky rice into a bowl, add water to just cover it, and soak for about 30 – 45 minutes until the rice is soft. Then, rinse it clean with 2 – 3 changes of water and drain in a colander.
After rinsing and draining the sticky rice, put it into a steamer pot, add 1 tablespoon of cooking oil, and mix well. The oil will help the finished sticky rice to be softer and shinier. Steam the rice for about 30 – 35 minutes.

Making Chicken Offal Sticky Rice
Place a pan on the stove, add 1 tablespoon of cooking oil to the pan, and turn the heat to high. When the oil is hot, add minced garlic and sauté until the garlic turns golden and fragrant, then add the cleaned chicken offal and stir-fry until it is slightly firm.
After about 3 minutes of stir-frying the chicken offal, when it starts to firm up, add 1 teaspoon of oyster sauce and 1 teaspoon of soy sauce. Stir well and continue to stir-fry the chicken offal for another 5 – 7 minutes until it is fully cooked, then taste and adjust the seasoning before turning off the heat.
Scoop the steamed sticky rice onto a plate, drizzle with scallion oil, then add the stir-fried chicken offal, boiled eggs, and fried shallots on top to finish.
