Ingredients for Pig’s Trotter Porridge For 4 people

Pig’s head 1/2 piece Roasted rice 100 gr Onion 1 bulb Common seasoning a little (salt – sugar – ground pepper) Cilantro a little Vietnamese coriander a little

How to choose fresh pig’s trotter and pig’s head bones

  • Pig’s trotters are usually sold as a whole pig’s head, however, if you go to the market early, you can also buy the part of the trotters that have been cut off.
  • For any part of the meat on the pig, be careful not to choose meat with strange spots on the skin or any foul smell. Or do not choose trotters that have strange black or green spots or a slimy surface.
  • The best meat is hot meat, freshly slaughtered, with a bright, pinkish color.
  • For the pig’s head bones, you need to choose those that are of moderate size, still have the brain intact, with fresh bone color, and have the characteristic smell of pig bones.

How to make Pork Bone Porridge

  • Prepare the ingredients

    The pig head bones you bought should be chopped into bite-sized pieces, washed clean with diluted salt water, and then drained. For any remaining pig hair on the skin, use a razor blade to scrape it off.

    Wash the scallions, cut off the roots. Pick the leaves from the Vietnamese coriander, discarding the stems, and wash them clean. Similarly, for the cilantro, cut off the roots and wash them clean. Chop the scallions, Vietnamese coriander, and cilantro into small pieces and place them on a plate.

    Peel the onion and wash it with water. If the onion is too large, you can cut it in half.

    How to clean pork meat without smell
    • In addition to blanching the meat in boiling water to eliminate the smell, you can also soak the meat in a mixture of diluted salt water or vinegar for about 5 minutes, then take it out and rinse it clean.
    • Alternatively, you can rub salt onto the meat and let it sit for about 5 minutes before rinsing it clean.

    Add 100g of toasted rice into a pot, then add about 2 liters of water. Place the pot on the stove and cook over high heat for 25 – 30 minutes until the porridge grains are soft.

    Toasted rice that is slightly yellow will help the porridge have a more fragrant aroma. You can also use non-toasted rice, but the flavor will not be as aromatic compared to toasted rice grains.

    During the cooking process, remember to skim off the foam that rises to the surface of the porridge.

  • Simmering Pork Cheek Bones

    While the porridge is cooking, clean and simmer the pork bones. Place the pork cheek bones into a pot, add about 2 bowls of water, then place it on the stove and turn on high heat.

    When the water in the pot boils, stir well and cook the bones briefly for about 2 minutes. After that, remove the bones into a basin, rinse with water, and clean the pork bones again.

    The head bones usually contain many impurities and residual blood, which can give the bones a slightly unpleasant smell. Briefly cooking the pork bones will help clean and reduce the unpleasant odor of the pork bones.

  • Cook pork cheek bones with porridge

    After thoroughly cleaning the pork bones, add the bones and 1 onion to the pot of porridge that is cooking. Stir well and simmer the porridge over medium-low heat for about 25 – 30 more minutes to extract the sweetness from the bones.

    Prepping the bones helps your porridge be clearer and have less cloudy foam on the surface. After 30 minutes of simmering the bones, proceed to season with salt, sugar, and ground pepper to taste, then turn off the stove.

    Scoop the porridge into a bowl and add chopped green onions, cilantro, and Vietnamese coriander. Now enjoy it immediately.
