For chilled and prepped fish: You can rely on the signs of the fish’s eyes, anus, gills, scales, mouth, and body, the texture of the fish, or smell to select good fish.

  • Observe the catfish’s eyes; if the eyes are bright and clear, not cloudy and have a certain bulge, it indicates fresh fish.

  • Touch the fish; you can feel the elasticity of the fish’s flesh. If the flesh quickly returns to normal after being pressed and does not indent, it means the catfish is still fresh.

  • Do not buy catfish that has a foul smell or unusual odor, and whose flesh is soft and mushy; this indicates that the fish has been stored for too long and is no longer fresh.

  • Prepare catfish

    To remove the slime and fishy smell, after purchasing, you should scrub the catfish with salt, soak it in water mixed with a little lemon juice or vinegar for about 3 – 5 minutes, then rinse thoroughly with water and let it drain.

    • You can rub it with salt or wash the fish with cold water mixed with a little alcohol or vinegar.
    • Continue to rinse the fish with clean water once more, then place it in a colander to drain.
    • Additionally, you can boil water and gently pour it over the fish, then use a knife to scrape off the slime, which will help remove the fishy smell and slime of the fish.

    The turmeric should be peeled, washed, and then crushed finely using a pestle.

  • Mix the marinade for the fish

    Add 5 tablespoons of water to the turmeric bowl, stir well and then strain to get the juice into a small bowl.

  • Marinate the fish

    Pour the mixed marinade evenly over the fish, then add another 2 tablespoons of fish sauce, mix well, and let the fish absorb the spices for about 30 minutes.

  • Cook the fish

    Put a pot on the stove, add 1 tablespoon of cooking oil and heat it up, then add minced shallots and sauté until fragrant.

    When the shallots are fragrant, arrange the fish in the pot and stir evenly for about 3 – 5 minutes until the fish is partially cooked and both sides are firm.
