  • Fresh and delicious tilapia usually has clear and slightly bulging eyes. The gills are pinkish-red, the scales are shiny, and they are closely layered like tiles.
  • The fish body is intact without any wounds, and the scales cling tightly to the body. Choose fat, round, large, and smooth fish, with a firm body, and the head and body should be proportionate to each other.
  • The flesh of the fish is firm; when pressed, it should bounce back, and the skin should not have any unusual colors. If you notice any abnormal signs such as bloating, weak swimming, or pale color, do not choose to buy.

  • Prepare the ingredients

    • Method 1: Soak the fish in diluted saltwater or rice washing water for about 15 minutes, then rinse it thoroughly and let it drain. For fish with a strong fishy smell, use coarse salt to rub the fish for about 3 minutes, then rinse, the fishy smell will be significantly reduced.
    • Method 2: Use lemon juice or vinegar to rub the fish, then rinse it clean, which also helps to eliminate the fishy smell and makes the fish cleaner.
    • Method 3: After cleaning, soak the fish in white wine for about 2 minutes, then take it out and dry it with paper towels, which will help effectively eliminate the smell.
