  • Fresh and delicious lamb meat is characterized by bright red color, no dark spots, and when touched, you can feel the smoothness and elasticity of the meat.
  • To select good quality meat, you should choose pieces with a moderate layer of fat, not too thick; if the fat layer is too thick, it will give the lamb meat a strong odor, making it difficult to cook.
  • You should avoid selecting lamb parts that are slimy, with a creamy white fat layer around the cut, as these may be pieces that have been stored for too long or from sick sheep that need to be slaughtered quickly.
  • You can easily choose good meat by pressing your finger into the meat; if it sinks or deforms, that indicates it has gone bad and should not be used.

  • Prepare the ingredients

    To remove the fishy smell of lamb, after purchasing, prepare water and add 1 spoon of salt to dissolve, then soak the lamb in the mixture for about 15 minutes. Remove the lamb and let it drain, then dry it with a towel.

    Wash the onions, tomatoes, and chili peppers; then peel the onion and cut it into wedges. Remove the stem from the tomatoes and cut them into wedges. Remove the stem from the chili peppers.

    Place a pressure cooker on the stove, add 3 tablespoons of cooking oil into the pot, and once the oil is hot, add the lamb to fry briefly on both sides.

    Next, add the sliced onion, tomato wedges, 2 green chili peppers, 2 tablespoons of salt, and 1/2 tablespoon of ketchup into the pot and stir-fry for 3 minutes. Then add 800 ml of boiling water and cover the pot to braise for about 45 minutes on high heat (for a regular pot, it takes about 1.5 hours to braise).

    Braised until the water reduces, leaving a little water, then turn off the heat. Release the valve to let the steam escape for about 5 minutes before opening the pot lid.

    Season to taste, then scoop the meat onto a plate and serve with hot rice.

  • To choose fresh and delicious lamb ribs, you should first prioritize pieces with interspersed lean meat and fat, as this will make the meat tender and not dry when eaten.
  • The lamb meat should be bright red, and the fat should be a cloudy white color. The surface should be dry, and when pressed lightly with your hand, the ribs should have a certain level of elasticity.
  • You should not choose pieces of ribs that are slimy, with yellow fat or meat that has an unusual smell, as this indicates that the meat has been stored for too long or is spoiled.

How to make Lamb stew with vegetables

  • Preparing the lamb ribs

    To reduce the odor of the lamb ribs, first soak the lamb ribs in diluted salt water for about 15 minutes.

    Then place the lamb ribs in a pot, add enough water to just cover the surface, and add about 1 teaspoon of salt. Boil on high heat. When the water boils for about 3 – 5 minutes, take out the ribs and rinse them thoroughly with water.

    First, peel the skin off the potatoes and carrots, then wash them clean and cut into bite-sized pieces. Next, remove the stems of the tomatoes, wash them clean, and cut into wedges.

    Green bell pepper should have its stem removed, be washed clean, and cut into slices about 2cm thick. Finally, peel the onion, wash it clean, and cut into wedges similar to the tomatoes.

    Place the pressure cooker on the stove, add 2 tablespoons of cooking oil and turn on high heat. When the oil is hot, add the lamb ribs and fry until golden on both sides for about 7 – 10 minutes.

    After frying the lamb ribs until golden, add potatoes, carrots, onions, green bell peppers, green chili whole, 1 tablespoon of MSG, 1 tablespoon of seasoning powder, 1/2 tablespoon of salt, 1 tablespoon of tomato sauce and 1 tablespoon of vinegar.

    Quickly stir for about 3 minutes and then add 500ml of hot water to the pot. Cover the pot and cook until you hear the hissing sound, then reduce the heat to simmer for 30 minutes to complete.

Effective ways to eliminate the smell of lamb

  • The simplest way to eliminate the smell from lamb is to wash the lamb with tea. Soak the lamb in tea for 10 minutes to allow the tea to penetrate the meat and reduce the smell.
  • Coarse salt is also an effective measure to eliminate the smell of lamb; just rub a little salt on both sides of the meat and marinate for about 60 minutes, then rinse with water.
  • In addition to the above two methods, you can roast a piece of ginger, then pound the ginger and marinate it with the lamb for about 20 minutes. However, this method is only applicable for certain dishes that use ginger as an ingredient.
