Ingredients for Pork Bone Noodle Soup For 3 people

Pork bones 500 gr Noodles 400 gr White cabbage 2 bulbs Carrot 1 bulb Green onions a little Coriander a little Common spices a little (salt/msg/seasoning/pepper)

How to choose fresh pork bones

  • To choose fresh pork bones, you should select pieces with a natural pink color; when you press the meat with your hand, it should feel elastic.
  • You should buy pork bones of moderate size; if they are too small, they are usually from young pigs, which have less meat and do not provide sweetness when cooked. If they are too large, it will be inconvenient during cooking.
  • Do not buy pork bones that are purple or have an unusual smell or discharge, as these are signs that the bones have been stored for too long and are no longer fresh.

How to prepare Bone Soup Noodles

  • Prepare the ingredients

    Pork bones should be soaked in diluted salt water for about 10 minutes, then washed thoroughly with water, drained, and marinated with 1 teaspoon of salt.

    Tips for preparing pork bones without a fishy smell:
    • Method 1: Clean the pork bones, then blanch them in boiling water for about 2 – 3 minutes, then remove the bones and rinse them under clean water.
    • Method 2: Soak the cleaned pork bones in diluted salt water for about 25 – 30 minutes. When the time is up, take them out and rinse them under running water.
    • Method 3: Additionally, ingredients such as shallots, white wine, vinegar, ginger, lemongrass,… can also help eliminate the odor of pork bones; when blanching the bones, you can add these ingredients.

    Peel the white radish and carrot, wash them clean, and cut them into round slices suitable for eating.

    Place the noodles in a bowl, soak them in hot water for about 20 minutes, then boil the noodles for about 5 – 7 minutes and rinse them with cold water to prevent the noodles from clumping together.

  • Cooking Noodles

    Put the bones, carrots, and white radish into the pot, add water up to the highest mark, and select the soup cooking mode.

    When cooking is finished, the light will flash, then release the steam and open the pressure lid, then switch to hot pot cooking mode level 2.

    Once finished in hot pot cooking mode, season the pot with a mixture of spices including: 1 teaspoon of salt, 1 teaspoon of monosodium glutamate, and 2 tablespoons of seasoning powder. After that, cook for about 3 more minutes and then turn off the heat.

    Pour the broth into a bowl with the noodles, sprinkle a little pepper, chopped green onions, and cilantro on top to finish.
