How to choose fresh pork ribs

  • Good pork ribs have a light pink but bright color, pressing on the meat of the ribs feels elastic and firm, the meat has a characteristic pork smell or is odorless.
  • Small and flat ribs will have more meat than large and round ribs; however, if the ribs are too small, they may be from young pigs, which have less tasty meat and are not safe.
  • In addition, you should not buy if you see the pork ribs are dull in color, soft and mushy, leaking water, or have a rancid smell; this meat has been stored for too long and is not good.
  • To cook porridge, you should choose ribs that have both lean meat and fat to make the porridge softer and richer in flavor.

How to choose good lotus seeds

For this dish, you can use fresh or dried lotus seeds depending on your preference.

  • For fresh lotus seeds: You should buy lotus seeds that have just been harvested and are still on the lotus pod or those that have not been shelled, with the seeds inside being plump and round, with a creamy white or deep yellow shell, which, when cooked, has a very fragrant smell and does not have a grainy texture.
  • When choosing dried lotus seeds: You should select seeds that have had the core removed, are opaque white, small, and uniform because they have a very fragrant and rich flavor when eaten, containing a high nutritional content. Avoid choosing seeds that are infested, chipped, or have a musty smell due to being stored for a long time.

How to choose good mung beans

  • To save time when preparing, it is advisable to choose the type that has already been peeled, with a beautiful yellow color, half beans that are firm, not infested with pests, and have a light characteristic aroma of mung beans.
  • If you buy mung beans with the skin on, it is better to choose beans that are plump, evenly sized, and not infested or shriveled.

  • Preparing the pork ribs

    To eliminate odor and clean, the purchased pork ribs should be cut into bite-sized pieces, then washed with diluted salt water for about 5 minutes, and rinsed thoroughly with water, then drained.

    • Method 1: Rub salt into the ribs for about 2 – 3 minutes, then rinse thoroughly with water.
    • Method 2: Using rice vinegar or white wine can also help eliminate the odor of the ribs.
    • Method 3: Blanch the ribs in boiling water with a few crushed ginger slices, then rinse with water.

  • Prepare other ingredients

    Wash the rice with water about 2 – 3 times and then drain. Clean the lime and cut it into 4 pieces.

    For the lotus seeds, if you choose to buy fresh lotus seeds, you need to peel them, remove the stamen, and wash them thoroughly to avoid bitterness if the stamen is still attached.

    For the dried lotus seeds found in supermarkets: you need to soak them in water for about 2 hours for even swelling, preventing hardness. Then, boil the lotus seeds in water for about 10 minutes to soften them quickly.

    For the mung beans you bought, rinse them with water, removing any damaged or moldy beans. Next, soak them in water for about 3 – 4 hours.

    Tip

    • Soaking beans and various grains before cooking will help them become softer, prevent them from being hard while cooking, shorten the cooking time, and improve the dish’s flavor.
    • Additionally, soaking beans also helps reduce the amount of phytic acid, an enzyme inhibitor that enhances the nutritional value of the seeds.

  • Cook the ribs

    Add water to the rice cooker, turn on the “COOK” mode and bring to a boil, then add 2 teaspoons of salt and the juice of 1 lemon into the pot, then add the pork ribs and cook for about 3 – 5 minutes, then remove and rinse briefly with water.

  • Cooking Porridge

    Add the ribs, lotus seeds, mung beans, and rice into the rice cooker, then pour in 1 – 1.5 liters of water. Close the lid and turn on the cooking mode (COOK) to cook the porridge until the water in the pot boils.

    Open the lid, use a spoon to stir the porridge while skimming off the foam on the surface, then close the lid and continue cooking until the rice cooker switches to “WARM” mode. Let the porridge stay in the pot for about 3 – 4 hours in this mode for the porridge, lotus seeds, mung beans, and ribs to become tender.

    Finally, add 2 teaspoons of salt, 1 tablespoon of seasoning powder, and 1 tablespoon of sugar, then adjust the seasoning to taste to complete the dish.
