How to choose delicious termite mushrooms

  • You should choose to buy natural termite mushrooms when preparing dishes, as they will be tastier and more aromatic than organic cultivated mushrooms.
  • Termite mushrooms are usually only available during the rainy season, so you should buy mushrooms in the rainy months to get the best natural termite mushrooms.
  • For natural mushrooms, choose long and thick ones like fingers, and mushrooms that are still in bud will retain their crispness better than fully opened mushrooms. For organic cultivated mushrooms, you should note to buy mushrooms of moderate size, with dark brown caps, and when touched they feel firm.
  • Do not buy termite mushrooms that are bruised, have a strange smell, or lack the characteristic aroma of mushrooms.
  • Termite mushrooms particularly appear in the Mekong Delta and only appear once a year, lasting for a month, from after the first rains of the season until the beginning of the sixth lunar month. Termite mushrooms grow in places where termite colonies or nests are present.

How to choose fresh beef

  • When buying, you should use your hand to press on the piece of beef; if it is good beef, it will have a good firmness and elasticity, not feel sticky to the touch, and there will be no unpleasant or unusual odors.
  • You should choose small and tender pieces of meat, with smooth fibers, and when pressed, they have good elasticity.

  • Prepare the mushrooms

    The mushrooms you bought should be soaked in water, then use a knife to gently scrape off the outer layer of the mushroom skin to clean off all the dirt.

    After that, remove the part of the mushroom stem with roots, then rinse thoroughly with water.

    Place the mushrooms in a bowl of water, add 1 tablespoon of salt, then soak the mushrooms for 10 minutes.

    Rinse the mushrooms clean with water 2 to 3 times to ensure they are really clean, then lift them out to drain.

    Wash the rice thoroughly with water, then lift it out, place a pot on the stove, and add the washed rice to sauté over high heat until the rice is dry and fragrant.

    When the rice starts to smell fragrant and has a slightly toasted color, add water to cook the porridge, using a ladle to stir evenly to prevent the rice from burning at the bottom.

  • Prepare the beef and herbs

    Remove the roots from the onion you bought, peel off some of the dirt-covered outer skin, and wash it clean. Remove the roots from the herbs, then wash them clean.

    Slice the beef very thinly so that when chopping, it will become tender quickly. Chop the green onion roots together with the beef until the beef is minced.

    Effective ways to eliminate the smell of beef

    • To utilize available ingredients at home, you can take a suitable amount of salt to rub on the piece of beef, let it sit for 5 minutes, then rinse with water to help reduce the unpleasant odor of the meat.
    • Soaking the beef in white wine for 15 minutes and then rinsing it with clean water is another option for removing the smell of beef.
    • Alternatively, mixing a bit of lemon juice or vinegar with the beef and letting it sit for a few minutes before rinsing will make the beef smell much better.
    • Using roasted ginger, peeling it, then crushing it, rub the ginger on the beef and rinse it clean with water. The pungent aroma of ginger will eliminate the odor of the beef.

  • Sauté the mushrooms

    Place a pan on the stove, add oil, and sauté the minced garlic until fragrant.

    Next, add the prepared mushrooms and sauté over high heat for 3 minutes.

  • Finish the porridge

    When the porridge starts to soften, add the minced beef into the pot of porridge and stir with chopsticks to break the beef into small pieces without clumping.

    Also add the stir-fried mushrooms into the pot.

    Add 1 teaspoon of salt, 1 teaspoon of sugar (to taste; if you don’t like sugar, you can skip it!), and 1 teaspoon of fish sauce, then cook for another 5 minutes on high heat to complete.
