Sake 1 fruit (about 700gr) Peanuts 200 gr Sago flour 50 gr Potato flour 100 gr White sugar 300 gr Vanilla extract 1 tube Salt 1 teaspoon

How to choose fresh and delicious ingredients

How to choose good sake

  • To make the dessert delicious, you should buy large sake fruits with yellow-green skin, fully bloomed spikes.
  • If you cannot find the desired good sake, you can buy the still-green fruit, and leave it outside for about 2 – 3 days until the skin turns yellow; when you press it and feel it is soft, it can be processed.
  • You should not buy sake fruits with dark spots, signs of leaking slime, or those that are too immature and have not bloomed spikes.

How to choose good peanuts

  • You should choose peanuts with shiny, bright-colored shells, uniformly large sizes, and feel firm when held.
  • Do not choose peanuts that show signs of mold, unusual colors, or shriveled shells.
  • Do not buy peanuts that have been stored for a long time, as their shells are usually not shiny and will smell oily when cooked.

How to Make Sake Peanut Dessert

  • Prepare the ingredients

    Peel the sake, remove the pit, cut into pieces about the thickness of a finger, then rinse with water mixed with about 1/2 teaspoon of salt and rinse again with clean water, then drain.

    Soak 200g of peanuts in clean water for about 2 – 3 hours, then peel off the skins, rinse with water, and drain.

    Soak 100g of potato flour in clean water for about 1 – 2 hours until soft, then take it out, rinse with clean water, and drain.

  • Cook the peanuts

    Put a pot on the stove, add 1 liter of clean water, and 200g of peanuts, then cook on high heat. When the water boils, reduce the heat and continue cooking for about 10 – 15 minutes until the peanuts are soft.

    Tip: To know if the peanuts are cooked, bite into a few peanuts; if they are soft, creamy, not hard or gritty, and have no bitter taste, they are done.

  • Cooking the dessert

    When the peanuts are cooked and soft, add 100g of sweet potato flour, 50g of tapioca flour, and the cut sake into the pot and cook for about 10 minutes until the ingredients are cooked.

    When the dessert mixture boils and the ingredients are cooked, add 300g of white sugar, 1/2 teaspoon of salt, and 1 tube of vanilla extract, then stir well with a ladle until the sugar dissolves.

    You can adjust the seasoning to suit your family’s taste.
