How to choose fresh ingredients
How to choose fresh salmon fillet
- Good salmon fillet has a pink or orange color, bright and vibrant.
- Press the fish and feel the elasticity and firmness. The fish piece should be dry, with a characteristic salmon smell. The fat veins on the fish should be evenly colored and bright.
- Do not buy if the fish piece appears dull, soft, watery, or has a bad smell, as this indicates the fish is old and not fresh.
How to choose fresh and delicious asparagus
- Good asparagus has a firm, plump, straight stem, without breaks or wilting.
- The asparagus is gradually darker towards the tips, has a fresh color, and the base is dry, not waterlogged.
- Do not purchase if you see black spots on the stem or signs of mold. Additionally, if the asparagus tips have flowered, it is not usable.
How to choose fresh onions
- When buying onions, you should choose those with thin, shiny skins.
- Good onions will have a uniform color, feel dry and firm to the touch.
- You should not choose bulbs that have sprouted, with some hard and some soft spots, and uneven colors.

How to make Salmon Cheese Soup
-
Prepare the salmon
Fillet the salmon, rinse it clean, soak it in fresh milk for about 15 minutes, then take it out, rinse again, and let it drain.
How to remove the fishy smell from salmon
- Method 1: Dissolve 1 teaspoon of salt and 2 teaspoons of lemon juice in 1 liter of water. Soak the salmon in this mixture for about 15 minutes, then rinse with clean water.
- Method 2: Mix a little crushed ginger with 200ml of white wine (or vinegar), then add this mixture to water to soak the salmon, after about 15 minutes, take the fish out and rinse clean.
-
Steam and mash the salmon
Evenly rub 1 teaspoon of seasoning for children on the piece of salmon, let it sit for about 10 minutes. Then, steam the salmon for about 10 minutes starting from when the water boils to cook the fish.
After steaming, use a fork to mash the salmon flesh into small pieces.
-
Prepare other ingredients
Wash the asparagus, cut into pieces about 2 fingers long.
Wash the celery stalk, dice it. Similarly, peel the onion, wash it, and dice it.
How to prepare to avoid bitter asparagus
- After buying asparagus, wash it clean and cut off the tough ends.
- Next, soak the asparagus in diluted salt water for 15 minutes, then rinse with clean water before cooking.
-
Cook the soup
Heat 1 tablespoon of cooking oil for the baby, then add onion and celery, sautéing for about 5 minutes, then add asparagus and stir for another 2 minutes.
When the asparagus turns dark green, pour 400ml of chicken broth into the pot and cook for another 20 minutes. Next, add 30g of cheese to the pot and use a hand blender to puree the ingredients until smooth.
After the water boils again for about 3 minutes, add 1/2 of the salmon meat, 1 teaspoon of seasoning, and stir well until the seasoning dissolves completely.
Tip
- If you have time, you can make chicken broth at home following TasteVN’s instructions.
- Depending on your preference, you can reduce the amount of cooking oil to avoid the porridge being too greasy, which is more suitable for the baby.
-
Completion
Serve the soup in a bowl, sprinkle the remaining salmon meat on top, add a few square pieces of cheese, and garnish with a sprig of parsley for an attractive presentation.
