  • When buying shiitake mushrooms, you should choose those that are medium-sized, with a light brown cap that is slightly curled inward.
  • Prioritize buying mushrooms with short stems and a characteristic aroma. For safety, you should choose dried shiitake mushrooms (also known as đông cô)! Because fresh shiitake mushrooms, if not processed correctly, can easily develop substances that are harmful to health.
  • If buying fresh shiitake mushrooms, you should use a knife to cut into the cap; if you see a milky white substance oozing out, this indicates toxic mushrooms and should not be used.
  • If buying dried mushrooms, avoid those that have a musty smell or show white mold spots or are crushed and no longer intact.

  • Prepare the ingredients

    Soak the shiitake mushrooms and wood ear mushrooms in a bowl of water for about 30 minutes until they expand. After that, wash them clean and proceed to slice the shiitake mushrooms; keep the wood ear mushrooms whole.

    Green onions should have their roots cut off, washed clean, and chopped finely.

    Add the ingredients including: minced meat, wood ear mushrooms, shredded shiitake mushrooms, chicken eggs, and chopped green onions along with 1 teaspoon of pepper, 1 teaspoon of monosodium glutamate, 1 tablespoon of seasoning powder, 1 teaspoon of salt, and 1 tablespoon of fish sauce into bowl.
