  • To make delicious minced meat, buy shoulder or belly meat that has a mix of lean and a bit of fat; minced meat will be soft, fatty, not dry like made from lean meat, and not too greasy.
  • If buying pre-ground minced meat, choose meat that has a mix of lean and fat, with fresh color, no unpleasant smell, and no excess moisture.
  • If you buy meat to grind yourself using a meat grinder, choose meat that has a bright pink color, feels elastic and firm when pressed. The meat should not be dull in color, should have no unpleasant smell, and should not be mushy or watery.

    Wash the purchased pork ribs with diluted salt water and then rinse them clean and let them drain.

    Wash the tomatoes, dice 3.5 tomatoes, and slice the remaining half.

    Wash the green onions and coriander, remove the roots, let them drain, and then chop finely.

    Peel the onion, slice half of it thinly, and leave the rest whole.

  • Braised Pork Ribs

    Put a pot on the stove with 500ml of water and boil on high heat for 7 minutes. When the water boils, add 200g of pork ribs and blanch for 3 – 5 minutes, then turn off the heat and transfer the ribs to another pot.

    Next, in the pot with the ribs, add 2.5 liters of water and 3 teaspoons of salt, and proceed to braise on low heat for 20 minutes.

    Then, when the water boils, add 3.5 onions and 20g of dried shrimp and continue to braise for another 25 minutes.

  • Marinate Minced Meat

    Take a bowl, add 400g of minced pork, half of the chopped green onions and cilantro, 1/2 teaspoon of seasoning, 1 teaspoon of fish sauce, and 1/2 teaspoon of ground pepper, then use a spoon to mix well to let the flavors soak for 10 – 15 minutes.

  • Stir-fry tomatoes and cook the broth

    Prepare a pan with 1 teaspoon of cooking oil, 1 teaspoon of minced garlic, and 1 teaspoon of minced shallots, sautéed over medium heat until fragrant.

    Then add the diced tomatoes and 100ml of water, stir-fry for 10 – 15 minutes. When the tomatoes have released their color, turn off the heat and use a sieve to strain the juice back into the broth pot.

    Next, return to the broth pot and add 3 teaspoons of rock sugar, 1 teaspoon of seasoning powder, stir well, then add 400g of marinated minced pork and cook for another 10 – 13 minutes, then season to taste and turn off the heat.

    Tip:
    • If you don’t have rock sugar, you can substitute it with granulated sugar.
    • To avoid the minced meat getting mushy, you can add it as you eat; for the unused portion, just store it in the fridge refrigerator.

  • Blanch the noodles and complete the dish

    Then place another pot on the stove with 500ml of water on high heat. When the water boils, add 300g of rice noodles and blanch for 5 – 7 minutes, then take them out into a bowl.

    At this point, the noodle dish is almost complete. You put the noodles in a bowl, add a few boiled quail eggs, a bit of sliced tomatoes, and onions, then scoop in the pork ribs and minced meat, followed by pouring the broth on top, sprinkling with some green onions, cilantro, fried onions, and ground pepper, and you can enjoy it right away.
