- When buying pork cartilage, you should choose those with firm surrounding meat, good elasticity, and without any leakage or mushiness.
- Do not buy cartilage that has a pale pink color shifting to green, which has been stored for a long time in the freezer and lacks a clear origin.
- You should buy cartilage ribs from reputable meat shops at markets or large supermarkets.
How to choose fresh pork bones
- Choose bones that are medium-sized and have little fat. Good pork bones usually have a fresh color, not pale, and do not have any strange smell.
- The temperature of the bones when purchased also affects their quality; do not choose frozen bones, as they may have been stored for too long and are no longer fresh.
- You can select the type of bones according to your preference: thigh bones, back bones, tail bones, etc.
How to prepare Rib Porridge

Prepare the ingredients
Roast the shallots for about 5 minutes until fragrant, with a slightly charred outer skin, then rinse with clean water and peel off the outer layer. Cut off the roots of the green onions, wash them clean, and separate the green parts to blanch for about 1 minute, then drain.
Put the sticky rice and regular rice into an bowl, rinse thoroughly (keeping the rice washing water), drain, and add clean water to soak for 1.5 hours.
To eliminate the odor and clean the pork bones and ribs, when you buy them, wash them thoroughly in rice washing water, squeeze the juice of 1/2 lemon, soak for 5 minutes, and rinse 2 – 3 times with water, then set aside to drain.
How to clean pork bones and ribs without odor- You can remove the odor from the pork bones by boiling them briefly with lemongrass and shallots to eliminate all dirt and residual dust in the bones.
- You can also add a little white wine to the blanching water for the pork bones. The alcohol effectively eliminates the odors.
- Additionally, you can use lemon, vinegar, salt, or ginger to rub on the pork bones and let it sit for about 5 – 10 minutes before rinsing with water.

Cook the porridge
Place a pot on the stove, turn the heat to high, add 2 liters of water, rib bones, pork bones, and 4 roasted shallots, and boil for 15 minutes, skimming off any foam that rises during cooking.
After 15 minutes, the broth should become clearer and there should be no foam left; cover the pot, reduce the heat, and simmer for 1.5 hours.
When the time is up, open the lid, remove the rib bones, pork bones, and shallots, add the soaked rice, and simmer for an additional 2 hours.
Season with 1 teaspoon of salt, 1 teaspoon of seasoning powder, and 1/2 tablespoon of sugar. To make the porridge smooth and thick, stir gently for another 15 minutes.
Taste and adjust the seasoning as needed, then turn off the heat.

Cut the rib meat into bite-sized pieces, about half a finger length. Finely chop the green onions.
