How to Cook Sweet and Sour Mushroom Soup

Prepare the ingredients
Tomatoes should be bought, stems removed, washed clean, and cut into wedges.
Tofu is rinsed briefly with water and then cut into small square pieces.
Green onions and coriander should have their roots cut off and wilted leaves discarded, rinsed with water and drained, then chopped using a knife. Shallots are peeled, washed clean, and sliced thinly or minced finely.

Sautéing tomatoes
Place a pot on the stove and add 1 spoon of cooking oil. Wait for the oil to heat up, then add finely chopped shallots and fry until fragrant over medium heat.
When the shallots start to turn yellow, add the amount of tomatoes that have been cut into wedges and stir well. Then season with 1/2 teaspoon of salt and 1/2 teaspoon of seasoning powder, and sauté for about 2-3 minutes over medium heat until the tomatoes soften and release their juices.
For a better color, you can add 1/4 teaspoon of annatto powder.

Cook the soup
When the ripe tomatoes are soft, pour them into a pot with 400ml of bone broth and bring to a boil. Once the water boils, slowly drop in each meatball until they are all in.
Cook the meatballs on high heat for 8 minutes, then add the cut tofu and cook until it boils again, continue seasoning with 1/4 teaspoon of fish sauce and cook for an additional 3 – 5 minutes until the meatballs float.
Adjust the seasoning to taste, add a bit of chopped green onions and coriander, then turn off the heat. Ladle the soup into a bowl and it’s ready to enjoy!
