- When buying pre-fried tofu, you should pay attention to buy pieces that are bright yellow, and when pressed, they feel soft and smooth, as these are freshly fried and delicious tofu.

How to prepare Sour Vegetarian Mushroom Soup

Prepare the ingredients
Fresh bamboo shoots should be peeled, rinsed with water, and cut into small diagonal pieces about the length of one finger segment.
To remove the sour salty taste from the sour bamboo, wash and rinse it with water 2 – 3 times and then let it drain.
Oyster mushrooms should be washed with diluted salt water, then rinsed with clean water and squeezed dry.
Tofu should be rinsed briefly with water and cut into bite-sized pieces. Tomatoes should have their stems removed, be washed clean, and cut into wedges.
Beansprouts, cilantro, and chili should be washed thoroughly and allowed to drain. Remove the stems from the chilies and slice them, and chop the cilantro finely.

Cooking Soup
Add 3 tablespoons of cooking oil into the pot, heat the oil and then add the tomatoes, stir-frying evenly over medium heat. When the tomatoes are slightly cooked, add the sliced mushrooms and chili, stir-frying for 3 – 5 minutes.
Next, add 1 liter of water, sour bamboo shoots, and the seasoning mixture including: 1 tablespoon of sugar, 2 teaspoons of monosodium glutamate, 1/2 teaspoon of salt, 2 teaspoons of vegetarian seasoning, and 1 squeeze of sour tamarind into the pot.
Bring to a boil over medium heat, then add the tofu and cook for about 2 – 3 minutes before adding the shredded vegetable and bean sprouts to the pot.
Let the soup boil for an additional 2 minutes, taste and adjust the seasoning as needed, turn off the stove and add chopped coriander before serving.
