Chicken 1.2 kg (1 chicken) Spicy chili 100 gr Goji berries 5 gr Lemongrass 100 gr Garlic 20 gr Onion 1 bulb Red onion 20 gr Soy sauce 2 tablespoons Cooking oil 100 ml Seasoning powder 30 gr

How to Prepare Spicy Chicken Hot Pot

  • Prepare the Ingredients

    Put salt and chili into a mortar, pound finely and divide into 2 parts, one part for marinating the chicken and one part for the dipping sauce.

    Peel the shallots and garlic, wash them clean and chop finely. After peeling the onion, wash it clean, cut it into wedges, and let it drain.

    Wash the lemongrass, crush it. Wash the goji berries.

    After cleaning the chicken, cut it into 8 pieces, then add chopped shallots, garlic, 1/2 teaspoon of seasoning powder, 1 tablespoon of soy sauce and marinate the chicken for about 15 minutes.

  • Cooking

    Heat a pan on the stove, boil 100ml of cooking oil, then briefly fry the lemongrass in the oil until fragrant and then remove it, add the chicken. Fry the chicken for about 10 minutes on low heat until it is firm, until the meat is golden brown, then take it out.

    Then, place a pot on the stove, add 2 liters of water to boil, gradually add the onion, lemongrass, and chicken into the boiling water.

    Next, add about 100g of chili, 30g of seasoning powder, 1 tablespoon of soy sauce to the pot, and season the mixture to taste. Cook the mixture over medium heat for about 10 minutes until the chicken is tender.

    When the chicken is cooked and tender, add the goji berries to the hot pot and cook for another minute before turning off the stove. You can transfer the hot pot to an electric hot pot for more convenience when enjoying.

Local chicken 1 bird ( approximately 1.7kg – 2kg) Bird’s eye chili 150 gr Dried shiitake mushrooms 100 gr Red apples 100 gr Goji berries 50 gr Lotus root 200 gr Fresh coconut water 1 liter Shallots 1 tablespoon (chopped) Lemongrass 2 stalks Ginger 1 piece Accompanying herbs a small amount (mustard greens/ green cabbage/ Napa cabbage/….) Fresh noodles or fresh pasta 500 gr Cooking oil 50 ml Soy sauce 2 tablespoons Common seasoning a little (salt/ ground pepper/ seasoning powder/ sugar/ monosodium glutamate)

  • Prepare and fry the chicken

    Wash the chicken with diluted salt water several times, cut the chicken into quarters, rinse with clean water, and let it drain.

    Then place the chicken in a bowl and marinate with a mixture of seasonings including: 2 tablespoons of soy sauce, 1 teaspoon of seasoning granules, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of ground pepper, 1 tablespoon of chopped shallots.

    Marinate the chicken for about 45 – 60 minutes to allow the flavors to penetrate.

    Heat a pan on the stove, warm 50ml of cooking oil, then add the marinated chicken and fry over low heat for about 7 – 10 minutes until the skin is evenly golden.

  • Prepare the ingredients

    Shiitake mushrooms bought should be soaked in water for about 30 minutes to soften, then cut off the stems. Goji berries and red dates should be washed clean and also soaked in water for about 30 minutes; after soaking, rinse them once and drain.

    Ginger should be peeled and sliced thinly, and lemongrass should be chopped into pieces and smashed. The bird’s eye chili should be washed clean, and you can leave the stem on or remove it as you wish.

    Hotpot vegetables such as water spinach, green cabbage, and napa cabbage… should be washed thoroughly and drained; depending on your preference, you can prepare more types of accompanying vegetables!

    Lotus root should be peeled, soaked in water to clean, and then cut into thick pieces about 1/2 finger length.

  • Chicken hot pot with chili

    Place a pot on the stove, boil 1 liter of coconut water with 2 liters of filtered water over high heat. Then add the lightly fried chicken and cook over medium heat.

    After cooking the chicken for about 20 minutes until the water is gently boiling, add the red apples, goji berries, shiitake mushrooms, ginger, lemongrass, and chili to simmer for 15 – 20 minutes over high heat.

    Season with 1 teaspoon of salt, 1/2 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, and stir until dissolved.

    Adjust the seasoning to taste, simmer for another 30 minutes until the chicken is tender and absorbs the flavors, then scoop it into the electric hot pot and you’re done!
