  • A good bottle gourd will have a moderate size, a bright green skin, a straight body, and especially still have a fresh green stem.
  • To buy fresh bottle gourd, you should choose those with a layer of fine hair, as this indicates it is freshly cut.
  • Avoid buying bottle gourds that are too large as they may be overripe. You should also not buy those with unusual signs such as black spots, being waterlogged, or spoiled.

How to choose fresh pork

  • You should choose fresh pork pieces that have a bright color; specifically, good meat will be light pink or light red, and the fat will be translucent white with a slight ivory tint.
  • Good meat, when smelled, will have a characteristic aroma of meat, which is not unpleasant and does not have a fishy smell.
  • When touched, the meat feels firm, not too hard and not mushy, and if there is no slimy liquid oozing out, then it can be selected for purchase.
  • Avoid buying if the pork has a bad color and smell, especially if it is slimy.

  • Prepare the ingredients

    After purchasing the bottle gourd, peel it, wash it thoroughly, and then cut the gourd into round slices about 1.5 cm thick. Next, use a spoon to scoop out the seeds of the gourd.

    Wash the shiitake mushrooms and soak them in diluted salt water for about 10 minutes, then rinse them again with clean water, and use a knife to dice the mushrooms.

    Chop off the roots and wilted leaves of the scallions and coriander, wash them clean, then drain and chop them finely.

  • Cook the soup

    You place a pot of water on the stove, bring it to a boil, then add the stuffed gourd and cook over high heat.

    After that, add 1 tablespoon of seasoning, 1/2 teaspoon of salt, 1 tablespoon of sugar, 1/2 teaspoon of seasoning, 1 tablespoon of cooking oil to the pot, and boil for about 10 minutes.

    When the gourd is soft, taste and adjust the seasoning to your liking, then add chopped green onions and cilantro, stir briefly, and turn off the heat.
