Prepare ingredients
Chive flowers should be plucked and washed thoroughly to drain.
Green onions should be washed, with the green tops cut and placed in a mortar along with a bit of ground pepper to pound together.
Straw mushrooms should have their stems cut off, soaked in diluted saltwater for 10 minutes, then washed clean and drained.
Tofu should be rinsed briefly in water and then cut into small cubes for serving.

Cook mushrooms
Put a pot on the stove, add 2 tablespoons of cooking oil, wait for the oil to heat, then add the pounded green onion and pepper to sauté until fragrant.
Next, add the straw mushrooms and stir for about 1 minute, then pour in 600ml of water. Boil the water, skimming off any foam to keep the broth clear.

When the water boils, add to the pot: chopped tofu, 1 teaspoon of salt, 2 tablespoons of vegetarian seasoning, 1 tablespoon of sugar, and 1 teaspoon of monosodium glutamate, stir well.
