How to make Bo Bo Che with Coconut Milk

Prepare the Bo Bo seeds
The Bo Bo seeds you bought should be soaked in water overnight, then rinsed thoroughly and drained into a bowl.
Put a pot on the stove, boil 1 liter of filtered water until it boils, add a bunch of pandan leaves, then wait until the pandan leaves release their fragrance before removing them.
Add 200g of Bo Bo seeds, boil over medium heat and stir well. Cook until the Bo Bo seeds are soft.

Cook the Coconut Milk
Put a pot on the stove to heat, add all the coconut milk (you can adjust according to your taste) and bring to a boil over high heat, then add a bunch of pandan leaves, a little salt, and stir well to enhance the flavor of the coconut milk.
Then reduce to medium heat and add 25g of tapioca flour mixed with water, stirring continuously until the coconut milk thickens.

After the bo bo seeds have softened, add 200g of rock sugar (you can adjust according to your taste) and stir until the sugar dissolves. Then add 25g of tapioca flour mixed with water, cook on high heat, and stir continuously until the mixture thickens and becomes sticky.
