How to choose fresh beef bones
- When choosing beef bones, you should select those that have both bones and a bit of meat so that when cooked, the meat remains intact and retains a delicious flavor. These pieces of bone often have flat and small shapes.
- Fresh beef bones should be bright red in color and have a characteristic smell; you should avoid pieces that have an unusual foul smell or a preserved odor.
- Additionally, to check, you can press down on the beef bone with your hand. If the meat surface is taut and has elasticity, then it is fresh beef bone.
- You should not buy beef bones that are pale or have turned too dark red. If you smell an unpleasant odor or any strange smell coming from the beef bones, you absolutely should not purchase them.

Prepare the potatoes
After buying the potatoes, peel them, wash them thoroughly with water, and then cut them into pieces about 1 finger thick.

Prepare the beef bones
Rub the beef bones with salt and soak them in diluted salt water for 3 minutes, then wash them clean with water and let them drain.
Marinate the beef bones with 1 tablespoon of oyster sauce, 1/2 teaspoon of ground pepper, 1/4 teaspoon of salt, and 1/4 teaspoon of monosodium glutamate. Use a spoon to mix well and wait for the beef bones to absorb the seasoning for 5 – 7 minutes.

Cooking Potato Bone Soup
Place a pot on the stove, add 2 tablespoons of cooking oil, then sauté 1 small chopped shallot until fragrant. Once the shallot is golden and aromatic, add all the marinated beef bones, stir-frying on high heat for 3 minutes until they are firm.
Add 700ml of hot water to the pot to simmer the bones, then reduce to medium heat. Simmer the bones for about 25 minutes until the beef bones are tender, and during the cooking process, remember to skim off the foam to help the broth become clearer.
After 25 minutes, when the beef bones are tender, add all the potatoes, season with 1/3 teaspoon of salt and 1/2 teaspoon of sugar, and remember to adjust the seasoning to your taste.
Cook for another 5 minutes until the potatoes are cooked, then turn off the heat, add 1/2 teaspoon of ground pepper and 1 chopped green onion.
