How to Choose Fresh Taro
- When buying taro, you should choose tubers that are round and egg-shaped, with a rough skin, plenty of roots, and dirt still clinging to the skin.
- You should choose lighter tubers because lighter tubers have less water and a higher starch content, so when boiled, the taro will have a rich flavor and aroma.
- When selecting taro, you need to check if the tubers have many dimples. The more dimples, the tastier and richer the flavor.
- If you have to choose pre-processed or cut taro, select those with many purple streaks and deep red color as this indicates they are good quality tubers.
- Do not buy tubers that are rotten, bruised, have an unusual shape, or feel heavy in hand, as these will have a lot of water, and will taste bland and fibrous.

Preparing Taro
When you buy taro, to make peeling easier and avoid allergic reactions that cause itching, you should wash off the dirt and then boil it for 2 minutes.
After that, peel the taro clean, wash it again, and cut it into bite-sized pieces, about the size of game pieces.

Cook the porridge
First, rinse 200g of white rice with water twice, then add 500ml of water to the pot. Next, choose the slow cooking mode for 2 hours in the pressure cooker to cook the porridge.
Tip: To cook porridge while retaining more nutrients, you can choose the “slow cook” mode if you have time, as this mode will preserve more nutrients since the porridge is cooked slowly. If you are in a hurry, you can choose the “pressure cook” mode for 10 minutes. When you see the porridge has been cooked until the rice grains are soft, switch to the “low-temperature frying” mode for 15 minutes, then add the taro to the porridge and cover the pot.
After 15 minutes, the taro will be soft and the porridge will be well-cooked. At this point, you season the porridge with 1 teaspoon of salt, 1 tablespoon of fish sauce, and sprinkle some chopped green onions to finish.
-
Final Product
You pour the porridge into a bowl and sprinkle an additional tablespoon of fried onions on top, then enjoy it.
The porridge is cooked until soft, and the taro is tender but not mushy. When you sip a spoonful of hot porridge, you will feel the creamy flavor from the rice, taro, along with a faint aroma from the green onions and fried onions.
